Zucchini Raisin Loaf Recipe!

I have yet to find a store bought version of zucchini bread or banana bread that comes close to matching up with my homemade versions. This zucchini bread is moist (hate that word)..but describes this bread perfectly! its so good. I made it yesterday and half the loaf is already gone. nough’ said.

Here’s the line up

Salt, Nutmeg, Cinnamon, Agave syrup, Egg, Applesauce, Baking powder, vanilla extract, Zucchini, Raisins, Whole Wheat Pastry Flour, Canola Oil, Ground Flax Meal, Sugar

First up, mix together the applesauce, canola oil, shredded zuchinni, egg, vanilla extract, agave, and sugar

Next add in your dry ingrediets: flour, baking powder, cinnamon, nutmeg, ground flaxmeal,  and salt

mmm lots of cinnamon

Then add in your mix-ins (I ended up just using all raisins, but you can put anything you want: for example, chocolate chips (highly recommended), toasted pecans, dried cranberries, dried apricots, etc)

Then Pour Mixture into a loaf pan and bake at 350 for 45-55 minutes

 Wait for bread to cool, or if your impatient like me, dig right in and burn your tongue in the process. I also forgot to snap a picture before this happened. sorry im not sorry.

Zucchini Raisin Bread!

Servings: apx. 10 1 inch thick Slice: makes one small loaf

Ingredients:

Wet Ingredients:

1 cup Zucchini (grated)

1/4 cup canola oil

1/4 cup unsweetened applesauce (or you could use another 1/4 cup canola oil)

1/3 cup sugar (or sugar substitute)

1/4 cup agave syrup (or maple syrup)

1 tsp. vanilla extract

1 egg

Dry Ingredients:

1.5 cup flour (whole wheat or all purpose)

1 1/4 tsp baking powder

1 tbsp Ground Flax Meal (Completely Optional, just adds more nutritional value)

1 1/2 tsp cinnamon

1/4 tsp nutmeg

1 tsp salt

Mix ins:

1/2 cup of your choosing (Raisins, Dried Cranberries, chocolate chips, toasted nuts, etc)

Instructions:

Preheat Oven to 350 degrees

Mix together All of Wet ingredients listed above

Next add in all dry ingredients listed above

Then fold in toppings. Make sure not to overmix batter!

Pour batter into loaf pan and bake for 45-55 minutes. Until top of bread is firm to touch

Don’t wait to cool. eat this right away. with some butter or almond butter on top. Just make sure not to burn your tongue like I did

Some notes on recipe: This amount of ingredients made a smaller sized loaf then I expected. Next time I make this I would use the same ratio of ingredients but probably double the amount. If I were to make 2 loafs I would triple the amount.

Oh and incase your interested, 1 slice of this bread comes in at about 150 calories! not bad!
