WIAW-snacky edition

WIAW time!

These are actually my eats from yesterday..except I swapped out yesterday’s oats for this mornings creation

Maple Sweet Potato Oats!

In the mix: 1/2 cup mashed sweet potato, 1/3 cup oats, 1 tsp ground flaxmeal, 2/3 cup water, 1/3 cup almond milk, vanilla extract, cinnamon, topped with a sprinkle of granola, raisins, a spoonful of Mighty Maple pb, and a drizzle of maple syrup. OH. MY. GOD. amazing.

yup. it was as good as it looks. maybe even better then it looks

My lunch consisted of a bunch of snacks

90 calorie popcorn bag (yes i burnt it and still ate it) alongside an apple

Followed by a couple spoonfuls of hummus with baby carrots (unpictured)

a spoonful of mighty maple peanut butter. SO GOOD..not as good as cinnamon raisin swirl though

And finally some Butternut Squash Soup  and a few wheat crackers

I went to class from 4-6, then came home to make Mama Pea’s Vegetarian Pad Thai for dinner from her Cookbook! All of the recipes I’ve tried from this book are beyond amazing!

I added a few more veggies and pineapple to the recipe, and topped mine with some Siracha and scallions. SO GOOD.

I went to dance from 9:15-10:45 (in case your wondering I’m on a club dance team at UD and I just do Hip-Hop) so much fun and a really good work out!

Nighttime snackage around 11:30

rice cake with pb and raisins, and a little baby clementine alongside
