Apple Pie and Carrot Cake..but oatmeal versions of course:)Posted: October 20, 2011
ITS THURSDAY. as if you didn’t already know..yay for weekends:)
Did anyone see the E True Hollywood story on Casey Anthony?!
SO creepy..I didn’t follow the trail that closely, so a lot of what I watched last night was information on the trial I had never heard before. Insane. I actually had chills watching this..
ANYWHO on a lighter note..I’ve come up with TWO new overnight oat creations that are delishhhh
Carrot Cake Anyone?
In a saucepan I put 1/4 cup shredded carrots, 1/2 sliced banana, 1/3 cup oats, 2/3 cup water, 1/3 cup almond milk, 1 tbsp vanilla protein powder, 1 tsp vanilla extract, 1 tsp chia seeds, brought all of these to a boil and then turned the heat down to low, covered and let cook for 5 minutes. Poured into a bowl, and enjoyed in the morning with some almond butter, shredded coconut, and BLUEBS.
My roommates always joke that my overnight oats have more ingredients in them then anything I make, but the process is SO simple and SO worth it. Did I mention its my favorite meal of the day? probably:)
now onto the Apple Pie!!
Into a sauce pan goes, 1 chopped apple (you could use a half, but I like my oats to be large portions:)), 1/3 cup oats, 2/3 cup water, 1/3 cup almond milk, 1 tsp cinnamon, 1 tsp chia seeds, 1 tbsp vanilla protein powder. Same method just different ingredients, (brought the mixture to a boil, reduced heat to low, covered and cooked for 5 more minutes). Toppings for this batch, almond butter, raisins, and shredded coconut. THESE WERE SO GOOD. I LOVE APPLE PIE..AS OATMEAL.
And for lunch just now I had a yummy salad beast, where I didn’t have to throw it away like I did last time…I’m still crying about it.
In the mix, leftover turkey burger!, sweet potato, goat cheese, carrots, tomatoes, mixed greens, cucumber, and balsamic vinaigrette YUM.
Tonight I’m going to a Black and White themed mixer..I’m thinking a black skirt and white top..I know super original.
I’m also planning on making a yummy dinner involving Spaghetti Squash! If it turns out good I’ll post the recipe tomorrow
