Fact: Kim Kardashian and Kris Humphries are getting a divorce after only 72 days of marriage!

What you didn’t hear? (insert sarcasm) .. Apparently this is important enough to be on the local channels “BREAKING NEWS’..now talk about embarrassing.

Fact: I made Vegetable Tortellini Soup yesterday!..not as exciting as kim’s shocking divorce? sorry I’m not. Here’s how to make it!

Heat a soup pot over medium high heat, and coat the bottom of the pan with a thin layer of olive oil. Add in chopped onion, garlic, and zucchini

Cook down for about 5 minutes, until vegetables are translucent but not brown, and add in chopped tomatoes, italian seasoning, and chicken broth. Bring the mixture to a boil, and then add in the tortellini, and cook according to package instructions.

Once the tortellini is cooked through, turn off the heat and stir in the baby spinach. Season with salt and pepper and serve!

topped with a sprinkle of parmesan cheese for good measure:) deeeeeelishhhh. I love making a pot of soup for the week to eat for lunch or dinner throughout the week.

Fact: I was planning on making butternut squash soup this week, but forgot to buy butternut squash at the grocery store #winning

Tortellini Vegetable Soup

Servings: 6-8 Bowls

Prep time: 10 minutes

Cook time: 15 minutes

Ingredients:

3 medium zucchini’s chopped

1 medium yellow onion, chopped

2 cloves garlic, diced

1 tbsp olive oil

6 cups Chicken stock (or vegetable stock)

1  can diced tomatoes

1 tbsp italian seasoning

3/4 lb Tortellini (I used a pesto version, but plain cheese works just as well)

3 cups baby spinach

salt and pepper to taste

Instructions: Heat a soup pan over medium high heat, and coat the bottom of the pan with 1 tbsp olive oil. Add in the onion, zucchini, and garlic, and cook down for 5 minutes. Add in the chicken stock, diced tomatoes, and italian seasoning and bring to a boil. Add in the tortellini (cook according to package instructions). Once tortellini is done cooking, turn off heat and stir in the baby spinach. Season with salt and pepper to taste and serve warm.
