Sometimes I get the urge to bake..and for some reason I always feel like I need an excuse to whip up a baked treat. Well want to know what my excuse for making these dough ball’s was? The fact that Molly’s (my roommate) sister is coming to visit this weekend! Clearly I need to have a special treat around for guests, right?
But the truth is, you really don’t need an excuse to make these. You just HAVE to make them. This cookie is a cross between an oatmeal raisin cookie and a peanut butter dough ball, and they are pretty magical tasting. Sometimes I do amazing things, like think of recipes such as these dough balls. I’m clearly a genius..well actually Mama Pea is because I used her recipe as a base to go off of.
First up, I mixed the butter, Cinnamon Raisin Swirl Peanut butter!!!, brown sugar, powdered sugar, and vanilla extract together
Then I added in the flour, baking powder, salt, and ground cinnamon
all together now
I added in about 1/2 cup of oats along with 1/2 cup of raisins, and added a few splashes of milk so the dough came together
Baked for 10 minutes at 350 degrees, and you get perfectly amazing dough balls
I ate 2 of these straight out of the oven and burnt my mouth a little bit..
I also mainly decided to make these so I could have an empty cinnamon raisin swirl peanut butter jar to eat my oats in..so selfish of me! But in turn I have cookies to give..so its no longer a selfish act:)
If you want to make someone happy, get an A in a class, make a batch of these and give them to a teacher or friend, I promise they will love you for it.
Oatmeal Raisin Peanut Butter Dough Balls
Makes about 20 dough balls
1/2 cup earth balance (or regular butter)
3/4 cup cinnamon raisin swirl peanut butter (or just regular peanut butter)
1/2 cup light brown sugar
1/2 cup powdered confecctionars sugar
1 tsp vanilla extract
1 1/2 cup all purpose flour
1 tsp baking powder
1 tsp salt
1 tsp ground cinnamon
1/2 cup rolled oats
1/2 cup raisins
Milk (a couple splashes if needed to bring the dough together)
Instructions: Preheat the oven to 350 degrees F. In a mixing bowl, mix together (by hand or using an electric mixer) the butter, brown and powdered sugar, peanut butter, and vanilla extract. Next add in the flour, baking powder, salt, and ground cinnamon. Stir in the oats and raisins. If the dough is too crumbly, add in a few splashes of milk just to combine slightly. Using your hands, form 1 inch dough balls and bake on a cookie sheet for 10 minutes. They will be just lightly golden and still soft to the touch.
