Last night’s dinner was made delicious by 3 of my favorite store-bought ingredients
Spicy Peanut Bake coating and Roasted Red Chili Paste..I have used the chili paste in SO many things..these are both the bomb.com
And my favorite store bought marinade
With a side of Molly of course. My roommates a creep..:)
I used the Chili Paste and Peanut Coating to make Spicy Peanut Chicken
I pre-heated the oven to 350 degrees F and then washed and dried my chicken and placed the chicken on a non-stick baking sheet. I seasoned both sides with salt and pepper, and then spread a thin layer of chili paste on both sides of the chicken. I then took one packet of the spicy peanut coating and generously doused both sides of the chicken in the coating
Since I used small chicken tenders, these only took about 13 minutes to bake
So spicy and delicious!
Spicy Peanut Chicken
Total Time: 15 minutes
- 1 package boneless skinless chicken tenders
- 1 packet spicy peanut coating-should be able to find this in the Asian food isle
- 2 tbsp red chili paste
Instuctions: Pre-heat the oven to 350 degrees F. Place the chicken tenders on a non stick baking sheet. Season with salt and pepper. (Just a light sprinkle of both). Using a butter knife, spread a thin layer of chili paste on each side of the chicken. Then cover both sides of the chicken with the spicy peanut coating. Bake for 12-13 minutes. Serve warm!
I served the chicken with easy stir fried veggies and quinoa
I stir fried the veggies by heating up 1/2 cup of the terriyaki marinade (see picture above with creepy roommate) in a pan over med high heat
Once there was bubbling action, I adding in the veggies and cooked them for 5 minutes
Baby carrots don’t make the best stir fried veggies, but they were all I had so they were better than nothing!

I will be making this dinner very often. I cooked 1 cup of quinoa in 1/2 cup light coconut milk and 1 + 1/2 cup water. In the end I stirred in a tablespoon of the red chili paste
Thinking about this dinner makes me happy
Thinking about sorority recruitment and the email I just read about our schedule for the first week back makes me want to cry. Last year I was going through recruitment, so it only took up 2 weekends of my time. Now that I’m on the other end of it, the whole week leading up to the first weekend of recruitment we have “recruitment rehearsal” if you will, every.single.day. For about 3 hours every night
During that week easy dinners like this will definitely be the only thing I have time to make
I may loose my sanity for the first couple weeks of spring semester, but we’ll see about that when the time comes:)

I LOVE spicy foods..one of my roommates doesn’t like them as much so I’m cooking lots of spicy dishes while shes away:) Love you Sonny:)
