WIAW-So many greens!


Happy WIAW!

Yesterday I feel like I ate way more veggies than I have in a long time! I realize that I already showed you my veggie omelet I ate for breakfast yesterday morning, so lets just see what I ate for breakfast this morning!

Cinnamon Raisin overnight oats!

In the mix:

  • 1/3 cup rolled oats
  • 1/4 cup plain greek yogurt
  • 2 tbsp raisins
  • 2 tbsp vanilla protein powder
  • 1/2 tbsp chia seeds
  • 1/2 banana
  • 1 cup almond milk
  • 1 tsp cinnamon

All mixed up and put in the fridge overnight..topped with a little granola and I dug in!


For lunch yesterday I had SALAD BEAST!!..and it was so good..I haven’t had  big, green, bowl of goodness in WAy too long

In this massive bowl went

  • 1 chicken sausage
  • 2 cups baby spinach
  • 1/2 cup leftover roasted asparagus, chopped up
  • baby carrots
  • scallions
  • goat cheese
  • pickled jalepenos
  • hummus
  • raspberry vinegrette

This was an awesome combo!! I am a weirdo and love eating plain pickled jalepenos..but if your into spicy foods like me you would have loved this combo!

And you know what I did? I put this yogurt in the freezer for a couple hours so it got a little frozen..I will be doing this from now on..frozen greek yogurt is amazing!!

It was so nice out yesterday so this was a perfect cold treat!


So of course my mom calls me yesterday as I’m making myself dinner so I tell her what I’m whipping up..leftover fish, sauteed veggies with some spices, and brown rice

So of course my mom then goes on to tell me what she “whipped” up for dinner..

homemade ceaser dressing for ceaser salads

homemade mushroom risotto

marinated chicken under a brick that she marinated all day long in various spices

now THESE are nights when I wish I lived close enough to home where I could just stop by for the amazing food my mom makes

my gosh, if I lived closer to home I would be driving home every Sunday for a meal and food to go to have for the week..so let’s pick up the University of Delaware and move it to Boston shall we?

but speaking of home I’m going home on Thursday for the weekend!! i’m so excited to have spring break next week and see my family this weekend!


Edy’s slow churned 1/2 the fat pb cup ice cream in a coffee mug…perfect to go alongside studying for my stat exam

Speaking of that stat exam I have to go take it now!

    I used to eat Edy’s slow churned 1/2 the fat yogurt all the time! They have a pb one now? I need to get on that stat. All your eats look yummy! And what your mom made sounds delicious. I definitely need to try that frozen yogurt thing because I’ve been craving ice cream like crazy lately!
