Nutty Granola

I am officially the worlds worst procrastinator

I have an exam tomorrow

my notecards are sitting on my kitchen table..

UGH.

oh and ps..I’m still in my pajamas..whatever.

So since I’m the queen of procrastination I decided to do something productive with my time rather than stare at my notecards hoping my brain will just magically memorize them all

enter in a batch of nutty granola

ever since my lovegrown stash of granola ended..I’ve been hankering for some more delicious granola in my life

so the answer this morning was to finally make a batch from scratch! and let me tell you..making granola is SO easy!

it won’t even take up that much procrastination time…

First melt 4 tbsp almond butter and 4 tbsp agave nectar (or honey) in a bowl in the microwave

mmmm yumm

Next gather together all your ingredients on a cookie sheet

I used unsweetened coconut, chopped pecans, sunflower feeds, oats, dried blueberries, ground cinnamon, and a pinch of salt

Next pour the almond butter mixture over the mix-ins

now get ready to get messy..use your hands to incorporate everything together..or I guess you could use a spatula..but using your hands is way more fun

and then you get to lick them after..or you could just wash them I guess..

bake the granola at 300 degrees F for about 25 minutes, stirring 10 minutes through

warning: this stuff is ADDICTING

Nutty Granola

Makes about 4 cups

Ingredients:

  • 4 tbsp almond butter
  • 4 tbsp agave nectar (or honey)
  • 2 cups rolled oats
  • 1/4 cup unsweetened coconut flakes (or sweetened is fine too)
  • 1/4 cup raw sunflower seeds (optional)
  • 1/2 cup nuts (I used pecans, but you can use a mix of whatever you’d like)
  • 1/2 cup dried fruit
  • 1 tbsp ground cinnamon
  • 1 tsp salt

Instructions:

  1. preheat the oven to 300 degrees F
  2. in a small bowl melt the almond butter and agave nectar in the microwave until smooth
  3. Place all ingredients on a baking sheet
  4. pour the almond butter mixture over the ingredients and incorporate
  5. Bake for 25 minutes, stirring mixture 10 minutes into cooking time
  6. Allow to cool and enjoy!

but it was so worth it

Question for ya!: Have you ever tried making homemade granola?

I have a few times..its always slightly dangerous because I can never stop sampling it! its just so so yummy!
