(did I really just say howdy?)
ANY who yesterday I made enough mac and cheese to feed an army..but it was only me and Molly eating
So I plan on eating the leftovers for dinner tonight, and maybe as a late night snack:)
Here’s how you make it!
Saute 1 small chopped onion in 2 tbsp butter (I used earth balance because that’s what we have) over medium heat
Let the onion saute for about 5 minutes and then add in 2 tbsp of flour
Stir the flour around for 2 minutes and then add in 3 cups of 1% milk
It was a little tricky to take a picture of this process..but that was my best effort lol
Then allow the mixture to simmer for about 10 minutes until the mixture thickens
now its time to add the CHEESE..I added about 1 + 1/2 cups reduced fat sharp chedder, 1 cup mozzarella, and 1/4 cup goat cheese
Stir all together until all the cheese melts and then season with salt and pepper to taste
Then add in the cooked pasta (I used whole wheat elbow macaroni) and 1/4 cup pickled jalepenos.
I also added in about 2 cups of roasted broccoli. I roasted the broccoli at 350 degrees F for 25 minutes with just some cooking spray, salt, pepper, and red pepper flakes. You can pretty much add in anything you would like at this point..I’m thinking cooked chicken or roasted red peppers would be delicious
Pour the mac into a large baking dish and top with 1 cup panko bread crumbs and 1/2 cup parmesan cheese. Bake for 20 minutes at 375 and then broil for 3 minutes so the top gets nice and brown
OH EM GEE THIS IS SO SO GOOD GAHHH. And its around 450 calories for a large serving..not bad!
I want some more right meow. Or maybe in a little bit cause I ate breakfast about an hour ago..or maybe it should be called lunch..brunch? #collegegirlproblems
Healthy Mac and Cheese
- 2 tbsp butter
- 1 small red onion, chopped
- 2 tbsp flour
- 3 cups milk-I used 1%
- 2 cups reduced fat shredded extra-sharp cheddar
- 1/2 cup shredded mozzarella
- 1/4 cup goat cheese
- 1 lb elbow macaroni
- 1/4 cup chopped pickled jalapenos
- 1 cup panko bread crumbs
- 1/2 cup grated parmesan
- 2 cups chopped roasted broccoli (optional)
Preheat the oven to 375 degrees F. Melt the butter in a large saucepan over medium heat. Add the onion and cook until soft and translucent, about 3 minutes. Add the flour and stir to incorporate into the butter. Pour in the milk and whisk to incorporate. Reduce the heat to low and simmer mixture for 10 minutes until the milk thickens. Then add in the cheese and stir to incorporate. Season with salt and pepper to taste.
Cook the pasta according to package instructions. Drain and add to the cheese mixture along with the pickled jalapenos.
Pour the mixture into a large baking dish and top with bread crumbs and parmesan cheese. Bake for 20 minutes and then broil for 3 minutes.
Allow to cool slightly, and serve!

And you know how everyone is focusing on cutting back on the sweets, and focusing on getting healthy for the new year by posting healthy recipes?
Well sorry I’m definitely NOT sorry because this my friends, is the best banana bread I have ever made. And I’ve made a LOT of banana bread
Here’s how you make it!
First up, slice up 3 bananas and place 1/2 cup of butter (1 whole stick baby) in a non-stick pan over medium heat
Once the butter is pretty much melted, add in the sliced bananas and turn the heat up to med-high heat
Allow the bananas to cook for about 3 minutes, and then add in 3/4 cup granulated sugar
Stir together, and allow the mixture to bubble away for about 5 minutes, constantly stirring and breaking up the banana pieces
oh em geeee
Remove the mixture from the heat, and allow to cool slightly (for about 10 minutes or so)..and try not to eat this entire pan straight up
In the meantime, toast up the coconut, (I just toasted mine in the toaster oven)
Mine took about 4 minutes in the toaster oven, but watch carefully! You want the coconut dark, but not burnt! I also used sweetened flaked coconut
Then whisk together 2 eggs with 1/4 cup unsweetened applesauce (because we’re making a healthy banana bread DUH)
Once the banana mixture has cooled for about 10 minutes (it will still be pretty hot) combine the mixture with the eggs and stir quickly so the eggs don’t scramble!
Then add in 1 1/4 cup all-purpose flour, 1/2 tsp salt, and 1 tsp baking soda
Stir stir stir
This batter taste pretty amazing..but I wouldn’t know that or anything
Pour into a bread pan, and top with the toasted coconut!
And bake for 55 minutes at 350 degrees F
GAHH this is so good!! Optional add-ins would be chocolate chips or toasted pecans, but I honestly don’t think this bread needs anything else! Maybe an extra smear of butter on top..maybe.
Caramelized Banana Bread with Toasted Coconut
Servings: 1 Loaf
Prep time-25 minutes
Bake time: 55 minutes
- 1/2 cup (1 stick) of butter
- 3 bananas, thinly sliced
- 3/4 cup granulated sugar
- 2 eggs
- 1/4 cup unsweetened applesauce
- 1 1/4 cup all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
1 cup sweetened coconut flake, toasted
3/4 cup semi-sweet chocolate chips
3/4 cup toasted pecans
Instructions: Preheat the oven to 350 degrees F. In a non-stick saute pan, place 1 stick of butter over medium heat. Once butter is mostly melted, add in the sliced bananas and cook for 3 minutes. Then add in the granulated sugar, raise the heat to high, and cook for 5 more minutes, stirring constantly. After 5 minutes, remove from the heat and set aside to cool for 10 minutes. In a mixing bowl, whisk together the eggs and applesauce. Add in the banana mixture, mixing quickly to prevent the eggs from scrambling. Then add in the flour, baking soda, and salt, and stir to combine. In a greased loaf pan, pour in the batter and top with the toasted coconut. Bake for 55 minutes. Allow the bread to cool slightly, and then slice and serve!
The bread will last in an airtight container for up to 1 week, and freezes really well!
I have a weird obsession with muffins
But for some reason, I normally wait for a special occasion to bake up a loaf of bread, or batch of muffins
But let me tell you, do NOT wait for a special occasion to bake up these!
These would be Morning Glory Muffins that I made to bring for christmas..yes I know it was a special occasion, but I will be making these again very soon, no special occasion needed!
I would show you a step by step demonstration of how to make these but I literally just throw every ingredient in a mixing bowl and stir it all together. I prefer the simple methods of baking:)
Morning Glory Muffins
Serving Size: 12 muffins
Prep time: 5 minutes
Cook time: 25-30 minutes
- 1 cup whole wheat flour
- 1 1/2 cup all purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup sugar substitute ( or 3/4 cup regular granulated sugar)
- 1/2 tsp salt
- 1 cup shredded zucchini
- 1 cup shredded carrots
- 1 apple, cored and chopped
- 1/2 cup sweetened flaked coconut
- 1/2 cup golden or regular raisins
- 3/4 cup unsweetened apple sauce
- 1/4 cup canola oil
- 2 eggs + 1 egg white, (beaten)
- 1 tbsp ground cinnamon
- 1 tbsp ground nutmeg
- 4 tbsp chopped walnuts, toasted (optional)
Preheat the oven to 350 degrees F. Spray a muffin pan with non-stick cooking spray. In a large mixing bowl, mix all of the ingredients together until full incorporated. Evenly divide the batter into the muffin pan and sprinkle each muffin with a few toasted walnuts . Bake for 25-30 minutes, until the top of the muffins are golden brown. Allow to cool slightly, and serve! These muffins can also be frozen, or stored in an air tight container for up to a week.
These muffins are healthy-fied (yes that’s a word) but I promise you no one will know
As a matter of fact, my Nanny exclaimed they were the best muffins she has ever had
Yes, she could have just been saying that to make me happy, but my other family members devoured these as well
And if you want to eat them like my papa does, put lots of butter on it
I’m thinking a nice spread of almond butter would be delicious
So ya..make these asap..you won’t be sorry
