Notes from the Weekend

hi friends!

I go home for summer 2 weeks from today..um WHAT. where does the time go?

wanna hear about my weekend? okay.

friday I went and go fro yo by myself..

well okay in fairness to me not sounding like a total loser..I had to walk to the post office and fro yo was on the way home..AND I still have a gift card from my birthday..you try passing up free fro yo on a nice day!

I went to a class at the gym called “Butts and Guts”..let me tell you..it was like doing hot yoga cause the room was so effing hot. I never knew I could sweat so much

then I met my friend Kerri at Chipotle for dinner

i got a chicken burrito bowl with brown rice, black beans, veggies, hot salsa, mild salsa, and GUAC. obviously.

but like why does it have to be an extra $1.80 for guac? I know its worth it but really? can’t it be a dollar?

Saturday I went to the mall and got a dress for my sorority formal this Friday!

I also went to target..I literally can never go to target and not spend 100 dollars..does anyone else have this problem?

when I came back from target i made myself a delicious salad for lunch

spinach, snap peas, tomatoes, strawberries, honey goat cheese, turkey, and poppyseed dressing

i picked this up at target cause its my favorite at panera!

mmm so good

I also got some yummy mango peach salsa

as well as my favorite almond butter that i haven’t had in YEARS

well not years..I’m a bit dramatic..but I can’t find Justin’s anywhere but Target here in Delaware! so I was so happy when I spotted this!

so i incorporated some in my afternoon snack

plain greek yogurt, pumpkin butter, and almond butter. SO. GOOD…that was my last of my trader joes pumpkin butter stash..WAHH

I went to the gym on Saturday afternoon and for the first time there was legit no one there..I normally hate working out at our school gym because its always so packed you can barely move..so it was nice to have space to move around!

i also made myself a delicious dinner with Trader Joes yellow curry simmer sauce..if you have not tried this..you MUST

I sauteed up some bok choy, green pepper, snap peas, and frozen peas, then added in the trader joes yellow curry simmer sauce and some chicken stock. Simmered for about 15 minutes and served with brown rice, salmon (I buy the frozen gorton fillets and just bake them), and some siracha

DEEE lish

I didn’t celebrate in any cinco de mayo drinking festivities..WHO AM I?

I’ve had the apartment to myself all weekend because both my roommates went away to fraternity formals..its lonely living by yourself!

this morning i made myself a batch of bananas foster oats

with a few chocolate chips sprinkled on top because why not?

my first batch of hot oats in a LONG time..and they hit the spot!

the rest of my day with be occupied with studying, working out, and 7 hours of various sorority commitments

so much for a relaxing Sunday!

What I ate Wednesday

Good Morning!

The truth is I totally forgot it was Tuesday yesterday..so we’ll improvise a little bit

Side note: what I ate wednesday posts pretty much never show everything I ate in that day..just a little fyi..but I do my best to document!

Breakfast

Oats in a Greek Yogurt Container..(OIAGYC..? no?)

Pumpkin Butter Overnight Oats..topped with frozen berries, almond butter, and a sprinkle of granola

Lunch

After doing my bodyrock work out, the only thing I’m always in the mood for lately is a delicious protein packed smoothie

Okay so this isan’t really the smoothie I had yesterday because I forgot to take a picture..but In my smoothie yesterday went 1 frozen banana, 1/2 cup almond milk, 1/2 scoop protein powder, 1/4 cup greek yogurt, and 1 cup of spinach..basically my Green Monster smoothie

I also had a rice cake with almond butter that I failed to take a picture of as well..but it reminded me how much I love that combination!

Snack

I snacked on some carrots and hummus (jumbo size from costco) at some point during the day

as well as my new favorite

these are SO good..Molly and I polished off the bag yesterday..good thing we still have a bag of Barbeque left!

Dinner

Homemade Vegetarian Chili (I’ll post the recipe later today!)

topped with LOTS of cilantro..this is SO so good!

I also made myself a quesdilla alongside with just a whole wheat tortilla and some shredded cheddar cheese

With pineapple salsa from Costco..I literally eat that stuff by the spoonful its so good!

Dessert

7 ingredient peanut butter chocolate chip cookies

I probably shouldn’t have made these..but I had to celebrate national peanut butter day yesterday somehow! gahh these are so freaking good..I ate 2 of them

I also had a clementine and some grapes while watching all my favorite reality tv shows..Biggest Loser and Teen Mom 2

My roommate tells me I need to start watching better television

What do you think? Teen Mom 2 isan’t high quality television?..kidding.

Like I said, I’ll be posting the chili recipe later today!

What I’m loving lately

Hi!

So here’s the deal..I tend to eat the same things over and over again until I get sick of them…so what am I obsessing over now you ask?

Smoothies

I’ve been craving smoothies for lunch recently more so than anything else..I normally stick to this Green Monster smoothie recipe

Overnight oats

Overnight oats are back in action..I have been using this method pretty much every morning. I always try to eat my overnight oats slowly so they last longer, and I’m actually so sad when I finish them..truth.

Chocolate Almond Milk

Holy man where has this been all my life?! I was never a huge chocolate milk fan as a kid (mainly because I didn’t like drinking milk in general) but I have been straight up chugging this stuff. I also put some in my coffee this morning..SO GOOD

Apple Slices

Why is eating apple slices so much better than eating an apple whole?..I bought this apple slicer while I was home for christmas and it has been an amazing investment

Popchips

This is me being too lazy to take a picture of the popchips in my pantry right now. These are seriously so freaking good. And the entire bag has only 3 servings..that’s my kind of serving! And for only 120 calories a serving..it just keeps getting better and better

A New Phone?

Good Morning!

sorry I was MIA yesterday…I was just a little distracted by the fact that I needed to get a new phone

Meet my new Iphone 4s (the white one)..the black iphone 4 is my old phone that I managed to drop in the TOILET when I was out Saturday night..like seriously? I use to make fun of people that dropped their phone in the toilet..and then I did it

Note to self: don’t keep your phone in your back jean pocket while going to the bathroom.

And in case your wondering..insurance does nOT cover mistakes made by idiots (that would be me)..aka water damage or screen cracks

So 220 dollars later..at least I got to upgrade from the 4 to 4s?

moving on..

THE PATRIOTS WON!!

Superbowl party here I come:)..I have a lot of friends here who are Giants fans so this should be interesting..especially since last time we played the Giants in the Superbowl they won..not this time baby! (I am such a football fan poser)

On an even more random note..I tried 3 of my new chobani flavors this weekend and the winner was definitely the Passionfruit

Holy awesomeness this flavor is AMAZING. I also tried the blood orange and apple cinnamon..the blood orange was good..the apple cinnamon I wasn’t really a fan of! I thought it would be my favorite too! It just kind of tasted like eating a sour apple to me..bleh!

The past 2 nights I went out to the same mexican restaurant..but failed to take any pictures both times..sometimes when I’m with people that don’t really know about the blog I feel awkward..does this happen to any of you?

But nevertheless I ate lots of chips and salsa, guac, and fish tacos..deelishhh

And this morning’s breakfast is Overnight Pumpkin Butter Oats

topped with a few frozen berries and almond butter..yummm

I don’t have a very eventful day planned..just some grocery shopping and bodyrocking:)

Question for ya!: Have you ever broken a phone? Did it cost you a lot to get a new one?

When I had a blackberry I had to replace my phone a bagillion times and insurance always covered the cost..but the lady at the store told me iphones are more expensive then any other phone to replace..umm YA they are..goodbye to my bank account

Last night the most exciting thing happened to me

AHHH. I don’t think you understand how excited I am because I have literally never won anything in my LIFE. Not even the random pull out of a hat out of 20 kids in the class wins..NOTHING. I’ve also been wanting to try this granola for EVER..contemplated ordering some on Amazon..not even kidding. so YAY YAY YAY thanks again Courtney!

So back tracking to yesterday morning. Yesterday morning was one of those mornings where you wake up..and all you can think about is how badly you wish the bagel shop and starbucks delivered..but then about an hour later after chugging some water and advil you pull yourself together in a sweatshirt and leggings and make your way to both of these locations

Non-fat grande misto..magical

breakfast/lunch at 12:30

Whole wheat everything bagel scooped out and toasted with low fat chicken salad lettuce and tomato..WOOF say that ten times fast.

Oh and we also shared a side of french fries…YUP it was definitely one of those mornings

I don’t go to ndb (newark deli and bagel) nearly as often as the majority of my college does..but when I do it taste pretty freaking fantastic

And last night instead of going out again we took a late night trip to fro yo..YES

Banana and chocolate fro yo with strawberries, m and m’s, pb chips, dark chocolate chips, and white chocolate chips. ddeeeeelish

And TODAY is a very very special day! It’s my beautiful Nanny’s birthday! she’s turning 60 again!..:)

My Nanny is the best. She is so supportive of me and definitely accounts for half of the blog hits I get everyday:) She is always there for me and I look forward to our phone calls that we have every Sunday. Even though I’ll be calling her today AND tomorrow. I could not imagine my life without her. She is the funniest, most personable women you will ever meet. I am so lucky and fortunate to have her as my Nanny! I love you so much Nanny!

10 things thursday

1. I woke up at 11 this morning..I don’t normally sleep past 9:30

2. Last night I had the best drink ever

This would be chocolate almond milk, a frozen banana, and irish creme liquor. Its healthy because of the almond milk and banana DUH.

3. I might drive to target today just to see if they have the new chobani flavors..I’m especially intrigued by the apple cinnamon

4. I’ve been at “school” for a little over a week now, but I don’t start classes until February 6th. What have I been doing you ask? Good question..

5. During yesterday’s bodyrock work out I was so out of breath I thought I was dying..aren’t these work outs suppose to be getting easier?! ugh.

6. When you roast a pan of broccoli in a small apartment, your apartment WILL smell like rotten broccoli for a solid 2 days. I know this because my dinner last night was a green veggie quinoa pile of goodness

I roasted broccoli with olive oil, salt, pepper, and red pepper flakes at 350 degrees F for 35 minutes. Then I sauteed some spinach and mushrooms and combined it all in a bowl with cooked quinoa, goat cheese, and siracha hot sauce. It was delicious

7. I really wish starbucks and the local bagel shop delivered…life would be 100x better if this was the case.

8. I miss my dogs…and my mom dad and brother of course. Hi mom.

9. I spend way too much time on my couch..in fairness to me there aren’t many other places to sit in my apartment

10. WE ARE ALL OUT OF GREEK YOGURT. Hence maybe making the trip to Target today

I used up the last of it for breakfast this morning

Plain greek yogurt, blueberries, strawberries, almond butter, pumpkin butter, pumpkin granola. Wow this was freaking amazing.

WIAW-Choco-Chia-Berry Overnight Oats

Good Morning and happy WIAW

Breakfast: I’ve jumped back on the overnight oats bandwagon, and boy do I have a creation for you.

Choco-chia-berry overnight oats!

In this super duper chocolately bowl of goodness went

  • 1/4 cup plain greek yogurt
  •  1/4 cup almond milk,
  •  1/4 cup rolled oats,
  • 1 tbsp chia seeds,
  • 1 tbsp cocoa powder,
  • 2 tbsp chocolate protein powder
  • 1/2 cup frozen mixed berries
  •  topped with a teaspoon of almond butter.

Mixed together, placed in the fridge overnight, and voila!

Wow that bowl was amazing. I mean who doesn’t want to feel like they are eating dessert for breakfast?

Note: during christmas season I definitely eat cookies for breakfast..

On a random note, Molly and I took another trip to Costco yesterday and bought a 2lb bag of spinach. It is MASSIVE..it pretty much takes up half our fridge.

Lunch

After the costco trip I tried to make use of our excess produce by making a huge Salad Beast

In the mix: 2 cups mixed lettuce, 1 cup spinach, 1/2 bell pepper, grape tomatoes, broccoli, leftover spicy peanut chicken, cottage cheese, and mango peach salsa.

Workout

Yesterday’s bodyrock was a Fit test to see how much progress you have made from day 1. I forgot to record my fit test day 1, but at least I recorded yesterday’s right?

Here’s what I did

  • Squat Jumps (44)
  • Push Ups (20 regular, 12 girly push ups)
  • Burpees (15)
  • high knees (106)
  • tuck jumps (20)
  • switch lunges (32)
  • straight abs (24)

All of these moves are completed for 50 seconds, and the numbers next to them were how many I completed in 50 seconds. I’m pretty sure these numbers are higher than the first time I tried this! Especially the push-ups!

Then I did the following exercises for 2 minutes straight. I went through the circuit twice for a total of 12 minutes..it took me a little longer than 12 minutes though because I took some rest time in between each exercise.

Push up + dip

Push ups w/ side leg

Chest Press (using my makeshift sandbag)

Refuel Time!

Green Monster time! In the mix: 1 frozen banana, 1/4 cup plain greek yogurt, 1 scoop vanilla protein powder, 1 +1/2 cup spinach, 1 cup unsweetened vanilla almond milk.

I even got Molly to try this and she said it “wasn’t bad” aka she liked it and didn’t want to admit that she liked drinking a green smoothie:)

Dinner

Last night was Mexican Night! ole ole ole

I made a “skillet mexican chicken” which I wasn’t sure was going to turn out that great but it ended up being delicious! I think I’m going to share the recipe with you later!

We also had homemade guac (courtesy of Molly) and chips and salsa

We did damage on these chips

We were both in a food baby coma after last nights meal..for some reason this always happens to us on Mexican night..maybe we should refrain from buying tortilla chips next time lol

Normally I get hungry again later at night, but I was SO full up until I went to bed

But overall it was a very delicious, and mostly healthy day of eats!
