What I ate Wednesday

Good Morning!

The truth is I totally forgot it was Tuesday yesterday..so we’ll improvise a little bit

Side note: what I ate wednesday posts pretty much never show everything I ate in that day..just a little fyi..but I do my best to document!


Oats in a Greek Yogurt Container..(OIAGYC..? no?)

Pumpkin Butter Overnight Oats..topped with frozen berries, almond butter, and a sprinkle of granola


After doing my bodyrock work out, the only thing I’m always in the mood for lately is a delicious protein packed smoothie

Okay so this isan’t really the smoothie I had yesterday because I forgot to take a picture..but In my smoothie yesterday went 1 frozen banana, 1/2 cup almond milk, 1/2 scoop protein powder, 1/4 cup greek yogurt, and 1 cup of spinach..basically my Green Monster smoothie

I also had a rice cake with almond butter that I failed to take a picture of as well..but it reminded me how much I love that combination!


I snacked on some carrots and hummus (jumbo size from costco) at some point during the day

as well as my new favorite

these are SO good..Molly and I polished off the bag yesterday..good thing we still have a bag of Barbeque left!


Homemade Vegetarian Chili (I’ll post the recipe later today!)

topped with LOTS of cilantro..this is SO so good!

I also made myself a quesdilla alongside with just a whole wheat tortilla and some shredded cheddar cheese

With pineapple salsa from Costco..I literally eat that stuff by the spoonful its so good!


7 ingredient peanut butter chocolate chip cookies

I probably shouldn’t have made these..but I had to celebrate national peanut butter day yesterday somehow! gahh these are so freaking good..I ate 2 of them

I also had a clementine and some grapes while watching all my favorite reality tv shows..Biggest Loser and Teen Mom 2

My roommate tells me I need to start watching better television

What do you think? Teen Mom 2 isan’t high quality television?..kidding.

National Peanut Butter Day Cookies

Happy National Peanut Butter Day!

Here’s how I celebrated..

I put some peanut butter in my smoothie

I ate a rice cake with peanut butter

And I just made these cookies..

7 ingredient Peanut Butter Chocolate Chip Cookies

Yields 14 cookies


  • 1 cup peanut butter
  • 1/2 cup domino sugar baking blend (or 1 cup granulated sugar)
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 cup dark chocolate chips
  • 1/4 cup oats
  • 1/2 tsp baking soda

Instructions: Preheat the oven to 350 degrees F. Beat together the sugar and peanut butter until smooth. Add in the egg and vanilla extra and mix to incorporate. Stir in the chocolate chips, oats, and baking soda with a wooden spoon. Place 1 inch balls on the cookie sheet and bake for 10 minutes.

I made these in about 3 minutes

And then ate 2 of them straight out of the oven in about 2 seconds..

I’ll never learn.

Last night the most exciting thing happened to me

AHHH. I don’t think you understand how excited I am because I have literally never won anything in my LIFE. Not even the random pull out of a hat out of 20 kids in the class wins..NOTHING. I’ve also been wanting to try this granola for EVER..contemplated ordering some on Amazon..not even kidding. so YAY YAY YAY thanks again Courtney!

So back tracking to yesterday morning. Yesterday morning was one of those mornings where you wake up..and all you can think about is how badly you wish the bagel shop and starbucks delivered..but then about an hour later after chugging some water and advil you pull yourself together in a sweatshirt and leggings and make your way to both of these locations

Non-fat grande misto..magical

breakfast/lunch at 12:30

Whole wheat everything bagel scooped out and toasted with low fat chicken salad lettuce and tomato..WOOF say that ten times fast.

Oh and we also shared a side of french fries…YUP it was definitely one of those mornings

I don’t go to ndb (newark deli and bagel) nearly as often as the majority of my college does..but when I do it taste pretty freaking fantastic

And last night instead of going out again we took a late night trip to fro yo..YES

Banana and chocolate fro yo with strawberries, m and m’s, pb chips, dark chocolate chips, and white chocolate chips. ddeeeeelish

And TODAY is a very very special day! It’s my beautiful Nanny’s birthday! she’s turning 60 again!..:)

My Nanny is the best. She is so supportive of me and definitely accounts for half of the blog hits I get everyday:) She is always there for me and I look forward to our phone calls that we have every Sunday. Even though I’ll be calling her today AND tomorrow. I could not imagine my life without her. She is the funniest, most personable women you will ever meet. I am so lucky and fortunate to have her as my Nanny! I love you so much Nanny!

10 things thursday

1. I woke up at 11 this morning..I don’t normally sleep past 9:30

2. Last night I had the best drink ever

This would be chocolate almond milk, a frozen banana, and irish creme liquor. Its healthy because of the almond milk and banana DUH.

3. I might drive to target today just to see if they have the new chobani flavors..I’m especially intrigued by the apple cinnamon

4. I’ve been at “school” for a little over a week now, but I don’t start classes until February 6th. What have I been doing you ask? Good question..

5. During yesterday’s bodyrock work out I was so out of breath I thought I was dying..aren’t these work outs suppose to be getting easier?! ugh.

6. When you roast a pan of broccoli in a small apartment, your apartment WILL smell like rotten broccoli for a solid 2 days. I know this because my dinner last night was a green veggie quinoa pile of goodness

I roasted broccoli with olive oil, salt, pepper, and red pepper flakes at 350 degrees F for 35 minutes. Then I sauteed some spinach and mushrooms and combined it all in a bowl with cooked quinoa, goat cheese, and siracha hot sauce. It was delicious

7. I really wish starbucks and the local bagel shop delivered…life would be 100x better if this was the case.

8. I miss my dogs…and my mom dad and brother of course. Hi mom.

9. I spend way too much time on my couch..in fairness to me there aren’t many other places to sit in my apartment

10. WE ARE ALL OUT OF GREEK YOGURT. Hence maybe making the trip to Target today

I used up the last of it for breakfast this morning

Plain greek yogurt, blueberries, strawberries, almond butter, pumpkin butter, pumpkin granola. Wow this was freaking amazing.

Back to school time

I can’t believe I’m headed back to school tomorrow! I know I keep saying that..but it just doesn’t feel real

Well technically I’m going back to school on Tuesday, and going to my roommate Molly’s house in New Jersey tomorrow for the night to break up the drive a bit

Being home for 3 weeks has been really relaxing, and I’ve had lots of fun being with my family and friends

And of course cuddling with my two favorite people dogs

Yes sometimes I lay on the ground and cuddle with my dogs..what you don’t do that? oh.


ugh I just want to bring them with me:(

I realized I forgot to tell you about the half-batch of chocolate chip cookies I whipped up last night after dinner specifically for my Papa

I think it took me about 3 minutes to whip up the dough..I would call that record-time cookie baking!

Then didn’t really rise at all..not sure why..but a warm chocolate chip cookie just can’t be bad ya know?

And for my farewell dinner I requested a simple, yet delicious meal of roast chicken and roasted sweet potatoes and asparagus

delishhh..I also had some salad before this..and I sent the rest of the chocolate chip cookies home with my Nanny and Papa, so instead I had a little piece of dark chocolate for dessert:)

I probably won’t be posting again until Tuesday when I’m in delly-where, but we shall see

Random thought..I can’t decide if football is really boring, or really exciting to watch..anyone else feel this way?

I say this because as I’m sitting here writing this post my whole family (dogs included) are watching football..okay maybe the dogs aren’t actually watching but you know what I mean

I’m just going to go before you all think I’m weird..or weirder than before

Question for ya!: What meal do you request from your parents when they cook you dinner?

Mother-daughter Dinner


So last night I went to my friend Eliza’s house for a mother daughter dinner!

It was me, Eliza, Michelle and all of our mommas

I of course forgot my camera.UGH..but I took pictures of all the delciousness with my Iphone

But first..here’s a picture of  for embarassment purposes

This would be Eliza Michelle and I freshman year of high school..so 5 years ago..HAHAHA. They are going to hate me for posting this but its so funny

Last night was so much fun! We don’t get to see each other that often during the year because we all go to different colleges now, so it was fun to catch up! We had a lot of laughs thinking about middle school and high school

Eliza and her mom are amazing entertainers! They created quite the spread for us!

For dinner we had this delicious shrimp dish with tomato and feta

Served with bread for dipping!

And we also had salad with dried cranberries, candied pecans, and a maple vinegrette


For dessert we had ice cream with homemade hot fudge..GAHH so so good! I have had this hot fudge sauce ever since I’ve known Eliza, and I swear it taste better every time I have it!

I had a scoop of coffee ice cream with hot fudge sauce and berries

And of course the hot fudge sauce was sitting right next to me so I kept pouring a little bit on my spoon:) And then I had Eliza remove it from the table so I would stop doing that

She also put out a cheese tray, and we had delicious champagne:)

One of the cheeses was a Truffle cheese from France..it was AH-mazing

The whole night was so much fun, I think we should definitely make it a tradition for the future!

This morning I got up and went to the park with the doggies and my mom for a walk

Duke clearly wanted to drive

First we stopped to get coffee, (because I can’t go a day without it..sad truth), and I got a piece of whole wheat toast with peanut butter! I use to get this for breakfast every morning!

Lucy obviously wanted a bite

I gave her a little bite..even though she needs to loose some weight lol

The park was beautiful this morning..it is crazy how nice it is outside today! it’s almost 50 degrees out..pretty much unheard of for Massachusetts in January


Then I came home and did bodyrock day 5…it was pretty brutal. I’m happy tomorrow is a rest day because my legs are screaming at me!

Gingerbread with Lemon Sauce

Hi guys!

so guess what? CHRISTMAS EVE IS TOMORROW, just in case you didn’t get the memo

We are leaving for my Nanny’s house tomorrow in New Port,Rhode Island (we go there every year for christmas) so my mom and I have been busy in the kitchen today!

She has been in charge of all the savory items for tomorrow’s dinner, and I’ve been in charge of the baked goods!

And boy do I have a recipe for you!

Gingerbread with Lemon Sauce! And you know a recipe is really good when the recipe cards have stains on them:) This recipe is from my Nanny!

This is the perfect baked good for christmas eve dessert, breakfast, snack, late night snack..whichever you prefer

Here’s how you make it!

First combine the sugar and butter in a mixer

Beat together, and then add in one egg

Then in a separate bowl, combine all the dry ingredients and set aside: the flour, baking soda, cinnamon, ginger, ground gloves, and salt

In a large liquid measuring cup, combine 1 cup of hot water and 1 cup of molasses

Then alternate adding the molasses mixture, and dry ingredients in the mixing bowl until you get a lucious, smooth batter!

Grease a 9 inch round cake pan (by using butter or a little canola oil) and pour the batter in, then proceed to lick the mixing bowl and pray to not get salmonella…there’s only one egg so I say its safe

Bake in a 350 degree oven for 35-45 minutes until a tooth pick in the center comes out clear

For the Lemon Sauce

Combine 1 cup sugar and 2 tbsp corn starch in a sauce pan

Then add in 2 cups of very hot water, and bring the mixture to a boil and allow to cook for 5 minutes

Don’t be alarmed if the mixture gets close to over flowing, just monitor it closely!

woah baby!

After 5 minutes, remove from the heat and add in the butter, lemon juice, and lemon zest

The final two products together!

We are packing both of these up to bring to my Nanny’s house tomorrow, but if you were to serve it right away, allow the cake to cool and then top with a dusting of powdered sugar.

This is the perfect dessert to make a day ahead of time, or pack up and take to a christmas party!

Gingerbread with Lemon Sauce


For the cake:

8 tbsp (1/2 cup) unsalted butter

1/2 cup sugar

1 egg

2 1/2 cup flour

1 1/2 tsp baking soda

1 tsp ground cinnamon

1 tsp ground ginger

1/2 tsp ground cloves

1/4 tsp salt

1 cup molasses

1 cup hot water

Powered Sugar for dusting!

For the Lemon Sauce:

1 cup granulated sugar

2 tbsp corn starch

2 cup hot water

4 tbsp butter

1/2 cup fresh lemon juice

1 tbsp grated lemon zest


Pre-heat the oven to 350 degrees F. Grease a 9 inch round cake pan and set aside. In a mixing bowl, combine the butter and sugar and mix well. Then add in the egg, and mix well. In a separate bowl, combine all the dry ingredients (flour, cinnamon, ginger, cloves, salt, and baking soda) and set aside. In a large liquid measuring cup, combine the molasses and water and stir to combine. In the mixing bowl, alternate combining the dry ingredients with the molasses mixture until the batter is fully incorporated. Bake the cake for 35-45 minutes, until a tooth pick comes out clear in the center.

For the sauce, place the sugar and corn starch in a sauce pan. Add the very hot water and bring the mixture to a boil. Cook for 5 minutes, stirring and watching the pan closely. After 5 minutes, remove from the heat and stir in the lemon juice, zest, and butter.

Once the cake has cooled, dust powdered sugar over the top, and serve with the warm lemon sauce.

*note: the sauce is a thinner sauce..if you want to thicken it a bit, simmer the sauce for 20 minutes longer to get a thicker sauce.


You should really make this cake if you have yet to come up with a dessert for the holidays…oh and christmas cookies don’t count as a dessert..they count as a eat-5-throughout-the-day-because-its-christmas treat

You’re house will smell like heaven gingerbread..and it will be awesome
