1. I woke up at 11 this morning..I don’t normally sleep past 9:30
2. Last night I had the best drink ever
This would be chocolate almond milk, a frozen banana, and irish creme liquor. Its healthy because of the almond milk and banana DUH.
3. I might drive to target today just to see if they have the new chobani flavors..I’m especially intrigued by the apple cinnamon
4. I’ve been at “school” for a little over a week now, but I don’t start classes until February 6th. What have I been doing you ask? Good question..
5. During yesterday’s bodyrock work out I was so out of breath I thought I was dying..aren’t these work outs suppose to be getting easier?! ugh.
6. When you roast a pan of broccoli in a small apartment, your apartment WILL smell like rotten broccoli for a solid 2 days. I know this because my dinner last night was a green veggie quinoa pile of goodness
I roasted broccoli with olive oil, salt, pepper, and red pepper flakes at 350 degrees F for 35 minutes. Then I sauteed some spinach and mushrooms and combined it all in a bowl with cooked quinoa, goat cheese, and siracha hot sauce. It was delicious
7. I really wish starbucks and the local bagel shop delivered…life would be 100x better if this was the case.
8. I miss my dogs…and my mom dad and brother of course. Hi mom.

9. I spend way too much time on my couch..in fairness to me there aren’t many other places to sit in my apartment
10. WE ARE ALL OUT OF GREEK YOGURT. Hence maybe making the trip to Target today
I used up the last of it for breakfast this morning
Plain greek yogurt, blueberries, strawberries, almond butter, pumpkin butter, pumpkin granola. Wow this was freaking amazing.

I can’t believe I’m headed back to school tomorrow! I know I keep saying that..but it just doesn’t feel real
Well technically I’m going back to school on Tuesday, and going to my roommate Molly’s house in New Jersey tomorrow for the night to break up the drive a bit
Being home for 3 weeks has been really relaxing, and I’ve had lots of fun being with my family and friends
And of course cuddling with my two favorite
Yes sometimes I lay on the ground and cuddle with my dogs..what you don’t do that? oh.
ugh I just want to bring them with me:(
I realized I forgot to tell you about the half-batch of chocolate chip cookies I whipped up last night after dinner specifically for my Papa
I think it took me about 3 minutes to whip up the dough..I would call that record-time cookie baking!
Then didn’t really rise at all..not sure why..but a warm chocolate chip cookie just can’t be bad ya know?
And for my farewell dinner I requested a simple, yet delicious meal of roast chicken and roasted sweet potatoes and asparagus
delishhh..I also had some salad before this..and I sent the rest of the chocolate chip cookies home with my Nanny and Papa, so instead I had a little piece of dark chocolate for dessert:)
I probably won’t be posting again until Tuesday when I’m in delly-where, but we shall see
Random thought..I can’t decide if football is really boring, or really exciting to watch..anyone else feel this way?
I say this because as I’m sitting here writing this post my whole family (dogs included) are watching football..okay maybe the dogs aren’t actually watching but you know what I mean
I’m just going to go before you all think I’m weird..or weirder than before

Question for ya!: What meal do you request from your parents when they cook you dinner?

Yesterday was a great day because my Nanny and Papa came down to visit for the day! We went to their house for Christmas
We went out to lunch at my favorite restaurant Blue Ginger!
Like always, we shared a mix of small plates
These are their “bings” which are basically just dumplings, one of them was a ginger pork, another was a “blue cheeseburger”, and the last was a tofu scallion mixture..the pork was the best one!
This was also a new addition..brased short rib and manchego cheese grilled cheese with spicy thai tomato soup. Words don’t even begin to describe how amazing this was. OH MY GOD ;LAKDSJF;ALKSDF. I was so full by the time this came, but I managed to eat half of a half dipped in the spicy tomato soup.
Yesterday after lunch was spent lounging around, and then we went to another amazing restaurant for dinner called Maxwells
I didn’t bring my camera to dinner with me, so all I have to show you of my delicious meal is an Iphone pic
I ordered the Kaffir lime scallops served over curried eggplant and chopped up peanuts. This was SO good! I need to remember to ask my parents to take me to Maxwells more often:)
The rest of my day (REST DAY WOO HOO) will be spent packing because I’m going back to school TOMORROW..I seriously can’t believe it!
Side note I found this picture last night of the pups and actually died.
LOOK HOW SMUSHY AND LITTLE DUKE WAS AHHH. Don’t you wish puppies would just always stay that little? I do.

So last night I went to my friend Eliza’s house for a mother daughter dinner!
It was me, Eliza, Michelle and all of our mommas
I of course forgot my camera.UGH..but I took pictures of all the delciousness with my Iphone
But first..here’s a picture of for embarassment purposes
This would be Eliza Michelle and I freshman year of high school..so 5 years ago..HAHAHA. They are going to hate me for posting this but its so funny
Last night was so much fun! We don’t get to see each other that often during the year because we all go to different colleges now, so it was fun to catch up! We had a lot of laughs thinking about middle school and high school
Eliza and her mom are amazing entertainers! They created quite the spread for us!
For dinner we had this delicious shrimp dish with tomato and feta
Served with bread for dipping!
And we also had salad with dried cranberries, candied pecans, and a maple vinegrette
For dessert we had ice cream with homemade hot fudge..GAHH so so good! I have had this hot fudge sauce ever since I’ve known Eliza, and I swear it taste better every time I have it!
I had a scoop of coffee ice cream with hot fudge sauce and berries
And of course the hot fudge sauce was sitting right next to me so I kept pouring a little bit on my spoon:) And then I had Eliza remove it from the table so I would stop doing that
She also put out a cheese tray, and we had delicious champagne:)
One of the cheeses was a Truffle cheese from France..it was AH-mazing
The whole night was so much fun, I think we should definitely make it a tradition for the future!
This morning I got up and went to the park with the doggies and my mom for a walk
Duke clearly wanted to drive
First we stopped to get coffee, (because I can’t go a day without it..sad truth), and I got a piece of whole wheat toast with peanut butter! I use to get this for breakfast every morning!
Lucy obviously wanted a bite
I gave her a little bite..even though she needs to loose some weight lol
The park was beautiful this morning..it is crazy how nice it is outside today! it’s almost 50 degrees out..pretty much unheard of for Massachusetts in January
Then I came home and did bodyrock day 5…it was pretty brutal. I’m happy tomorrow is a rest day because my legs are screaming at me!

1. Lately I’ve ditched the oatmeal obsession for breakfast and have fallen in love with Greek yogurt combinations
this mornings breakfast was plain greek yogurt with pumpkin butter, almond butter, bluebs, raspberries, and a sprinkle of granola. SO NOM
2. I went to the best place on earth today..aka Trader Joes..here are the goodies I got to bring back to school with me
Protein powder, almond butter with flax seeds, sunflower seeds, pb pretzels, rainbow trail mix, dark chocolate, and pumpkin butter..dear Trader Joe if your reading, please open up shop in Newark, Delaware. please and thank you
3. After my Nanny read my post this morning, she told my mom that she doesn’t want me turning into an anorexic stripper. LOL.
4. Speaking of bodyrock day 3 I was a sweaty mess after about 20 minutes
You can’t really tell..but my head was pretty much soaking wet…looking gooood..
5. This is what happens when you try to do sit-ups and Duke is in the room
it was a little challenging

7. I had full intentions of sharing a recipe with you instead of this random mumbo jumbo
This would be goat cheese hummus..I thought it would turn out amazing..but it was a fail. UGH..don’t you just hate when recipes don’t work out?
8. Last night I passed out at 10, woke up at 2:30am, watched an episode of Chelsea Lately, and couldn’t fall back asleep until 5am. It was extremely annoying.
9. The other day I bought these two books
I’m really excited to try the recipes in the cookbook and share them with you! i normally get annoyed with celebrity trying to be chef cookbooks..but this one looks amazing! And about the Hunger Games..I still haven’t started it but I really want to read it eventually
10. I exchanged a christmas gift from lululemon for this top and I’m obsessed.
I wish lululemon wasn’t so expensive..i’m pretty sure I’m not alone on this thought
Last night’s dinner use to be a staple once-a-week meal while I was in high school
Teriyaki Salmon with brown rice and stir fried veggies!
This meal is so easy, healthy, and delicious and is ready in less than 30 minutes!
Side note, this makes me think of Rachel Ray and her 30 minute meals..love the concept..can’t STAND her. I use to like her a lot back when I was like..11 and watched the food network more than the disney channel..
Moving on..Here’s how you make it!
First preheat the oven to 375 degrees and get the salmon out. Place a sheet of foil on a baking pan and spray it with non-stick spray (this makes for REALLY easy clean up!) Place the salmon on top, and cover in a store bought teriyaki marinade, like this one!
Bake the salmon for about 25 minutes until just cooked through (you can cook it for less time if you like it more on the raw side)
Meanwhile, bring a pot of water to a boil for the brown rice. I buy the boil-in-a-bag type..easiest way to cook brown rice in my opinion!
Then chop up the veggies of choice..I used bok choy, red pepper, snow peas, and fresh ginger
I love bok choy! I need to start making it more often!
Then stir fry the veggies in a wok pan with some non-stick spray..(or a regular saute pan would work) over high heat for about 5 minutes. I also added in some extra marinade for the veggies
Once the rice is done, the meal is all ready to serve! So so easy!
I also want to share with you my breakfast and lunch this morning because they were delicious!
A whole wheat english muffin with almond butter, banana slices, pumpkin butter, and cinnamon. YUM..And of course I had coffee alongside…The first thing I think about when I wake up in the morning is coffee..#coffeeaddict
For lunch I was planning on having the leftover salmon and stir fried veggies..but SOMEONE (and by someone I mean my mom) gave the left over salmon TO THE DOGS for their breakfast..seriously mom? She left me about a bite worth of salmon.
But I still made a delicious salad
Mixed Greens with baby carrots, leftover stir friend veggies, grape tomatoes, a bite of salmon -__-, and spicy hummus thinned out with a little bit of water for dressing
I also had some white bean and ham soup that my mom thawed out
Back on track eating is going well so far!

So as I was eating a final breakfast at my Nanny’s house yesterday, (which I didn’t take a picture of because I didn’t realize it was Tuesday..) I decided its really time to get back on track with eating healthy, whole foods
And in case you were wondering..my breakfast consisted of half a scone (wait a scone isan’t healthy right..ya..) and fruit salad
Eating a bunch of cookies and potato chips amoungst many other delicious food items was fun while it lasted, but I definitely feel a lot better when I eat better..makes sense right? speaking of potato chips..have you ever had THESE
Middleswarth is a potato chip company that ONLY sells their potato chips in certain areas of Pennslyvania..my mom grew up for the most part in State College, Pennslyvania (where Penn State is), and every time we have gone to State College to visit, these potato chips are a must! And it just so happens that my Uncle brought a few bags for Christmas
We may or may not of hoarded the bar-b-q chip bag back to our hotel room..
And I just discovered you can order these on Amazon. uh oh

Enough blabber..so instead I’ll show you what I had for breakfast THIS morning
Plain Greek yogurt with a dollop ( my friend HATEs that word haha) of almond butter, pumpkin butter, and some granola on top. delishhhh
For lunch yesterday I was craving salad, and my mom so kindly picked me up a salad from a local deli called The Linden Store because we have ZERO produce in our house right now
A veggie arugula salad with goat cheese, dried cranberries, and chicken deli meat, tossed in some low fat italian dressing..so delicious! I forget how much I love arugula lettuce
I also munched on some grapes while laying on the couch all afternoon #solazy
Duke was feeling sleepy too
Don’t go stealing my Ugg’s Duke!
He was so happy to see me it was so cute!
For dinner last night we had meat sauce that my Aunt made
I had just a wee bit of pasta with lots of sauce
And salad to go alongside
Instead of the usual 3 cookies for dessert I had a clementine and a mini peanut butter cup from Trader joes
So my plans to get back on track are to
eat healthy, whole foods
drinks lots of water
work out 6 days a week
yup sounds about right! speaking of working out I should probably go do that now because I have a mall trip planned later..gotta catch all the good after christmas sales!
