Dinner tonight was a winner
Hey look I just rimed!
This dish was inspired by the meal I had at my friend Eliza’s house for our mother daughter dinner!
Spicy Tomato and Feta Shrimp! Here’s how you make it
First, saute 1/3 cup chopped onion and 1 clove diced garlic over medium heat in 1 tsp olive oil
After about 3 minutes, add in 1/2 tsp salt, 1/2 tsp black pepper, and 1 tsp red pepper flakes
Once the onion is slightly browned and translucent (it takes about 3 minutes) add in the tomatoes
I used a can of whole peeled tomatoes because that is what I had..so I used a fork to mash them up
Then add in about 1/4 of a pound of peeled and de-vained shrimp
Simmer the shrimp for about 5 minutes, turn off the heat, and add in 1/2 cup crumbled feta cheese
Stir all together, season to taste, and serve! This would be great served with pasta, over cous cous (like I did tonight), or just in a bowl with a piece of crusty french bread!
Spicy Tomato Feta Shrimp
Total time: 15 minutes
- 1/4 pound peeled + de-vained shrimp
- 1/3 cup chopped yellow onion
- 1 clove garlic, diced
- 1 14.5 oz can whole peeled tomatos (or diced tomatoes)
- 1/2 cup crumbled feta cheese
- 1 tsp red pepper flakes
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp olive oil
Instructions: Bring a saute pan to medium heat with 1 tsp olive oil. Add in the chopped onion and garlic and cook for 3 minutes. Add in the red pepper flakes, salt, and pepper, and cook until onions are brown and translucent (about another 2-3 minutes). Then, add in the tomatoes, and mash down with a fork. Add in the shrimp, and simmer for 5 minutes until shrimp are just cooked through. Remove the pan from the heat, and stir in the feta cheese. Season to taste and serve warm!
Note: An addition of lemon zest or dried italian seasoning would be great! Serve with pasta, cous cous, or with some bread for dipping!
I cooked up some cous cous and wilted some spinach to go alongside. Delicious! Normally cheese and seafood don’t mix, but I’m telling you shrimp and feta cheese is an AWESOME combination!
Note to self: Cook shrimp more often

Last night’s dinner was made delicious by 3 of my favorite store-bought ingredients
Spicy Peanut Bake coating and Roasted Red Chili Paste..I have used the chili paste in SO many things..these are both the bomb.com
And my favorite store bought marinade
With a side of Molly of course. My roommates a creep..:)
I used the Chili Paste and Peanut Coating to make Spicy Peanut Chicken
I pre-heated the oven to 350 degrees F and then washed and dried my chicken and placed the chicken on a non-stick baking sheet. I seasoned both sides with salt and pepper, and then spread a thin layer of chili paste on both sides of the chicken. I then took one packet of the spicy peanut coating and generously doused both sides of the chicken in the coating
Since I used small chicken tenders, these only took about 13 minutes to bake
So spicy and delicious!
Spicy Peanut Chicken
Total Time: 15 minutes
- 1 package boneless skinless chicken tenders
- 1 packet spicy peanut coating-should be able to find this in the Asian food isle
- 2 tbsp red chili paste
Instuctions: Pre-heat the oven to 350 degrees F. Place the chicken tenders on a non stick baking sheet. Season with salt and pepper. (Just a light sprinkle of both). Using a butter knife, spread a thin layer of chili paste on each side of the chicken. Then cover both sides of the chicken with the spicy peanut coating. Bake for 12-13 minutes. Serve warm!
I served the chicken with easy stir fried veggies and quinoa
I stir fried the veggies by heating up 1/2 cup of the terriyaki marinade (see picture above with creepy roommate) in a pan over med high heat
Once there was bubbling action, I adding in the veggies and cooked them for 5 minutes
Baby carrots don’t make the best stir fried veggies, but they were all I had so they were better than nothing!

I will be making this dinner very often. I cooked 1 cup of quinoa in 1/2 cup light coconut milk and 1 + 1/2 cup water. In the end I stirred in a tablespoon of the red chili paste
Thinking about this dinner makes me happy
Thinking about sorority recruitment and the email I just read about our schedule for the first week back makes me want to cry. Last year I was going through recruitment, so it only took up 2 weekends of my time. Now that I’m on the other end of it, the whole week leading up to the first weekend of recruitment we have “recruitment rehearsal” if you will, every.single.day. For about 3 hours every night
During that week easy dinners like this will definitely be the only thing I have time to make
I may loose my sanity for the first couple weeks of spring semester, but we’ll see about that when the time comes:)

I LOVE spicy foods..one of my roommates doesn’t like them as much so I’m cooking lots of spicy dishes while shes away:) Love you Sonny:)
How was everyone’s weekend?
So I’ve decided that aside from Trader Joes, Costco may be my second favorite place on earth, or just second favorite grocery store..favorite place on earth would be some place tropical..take me to a beach NOW, please and thank you
Molly and I went on Friday to stock up on some toiletries, and somehow managed to put way too many items in our cart..WOOPS
Here’s what we got
Pretzels..these may or may not have been my breakfast yesterday morning..or maybe my lunch because I woke up at 12..
frozen berries, and enough chicken to feed a family of 19 people..don’t worry its just Molly and I living here right now

These were by far the highlight purchases..I almost passed out when I saw that the whole almond butter jar was only 5.99!! Normally a small jar of that stuff is like 9 bucks..And the salsa was a free sample impulse buy..p.s. costco samples=awesomeness
We also got other things like toilet paper, cascade, water bottles, diet snapple, etc…and it took us about 3 trips to carry all of the stuff up to our apartment
I do have to show you what I did with the bunch of bananas I bought though
Sliced up, and put in the freezer for smoothie making!
Onto yesterday..As I told you before I woke up at 12..but only because I didn’t go to bed until 4am the
night morning before
And it was just a, um, off day if you will. I met my friend for lunch at panera, and was planning on doing my bodyrock work out but that just didn’t happen
Instead I went to go see the Decendents with my friends..It was my second time seeing it, and I think I liked it better the second time!
After the movie we came back and ate dins
A morningstar veggie burger with salad..I filled up my salad plate a couple more times obvs
After dinner we watched the Pats game..(PATS WON YAY)…I’m kind of a poser but I still have to root for my home team:)
And then we went out to my friends party

And finally for breakfast this morning I made myself a delicious egg mcmuffin
Egg whites with goat cheese and raspberry jam, sounds weird, tastes delicious
So, that was my weekend in a nutshell
The only thing on the agenda for today is Bodyrock, which unlike yesterday WILL happen

Gooooood Morning everyone!
So yesterday I drove down from Molly’s to school, and then we both helped each other carry all of our shit up 2 flights of stairs..I was sweating.
Molly’s mom made us a deeelicious egg burrito but I forgot to snap a pic, so instead I’ll show you what I just ate for breakfast!

This beautiful bowl would be fage 0% with banana nut granola and pumpkin butter..deeelishh..now my stomach kinda hurts though..meh
Yesterday after we unpacked everything Molly and I went to Pita Pit for lunch
I got a grilled chicken spinach salad with cucumber, feta cheese, tomato, green pepper, banana peppers, and balsamic dressing. It was alright, but definitely not as good as Monday’s salad!
I was planning on doing Bodyrock day 6 yesterday afternoon, but a nap sounded like a much better option
Don’t worry I made up for my work out by playing several rounds of kinect Just Dance with Molly
After I woke up from my nap I snacked on some pb pretzels

For dinner we went out to our favorite restaurant Homegrown
I got a cup of vegetarian chili to start, and then Molly and I shared the hummus platter and deconstructed sushi
Hummus, Mediterranean tomato salad, eggplant salad & warm pitas.
**Deconstructed Sushi 1
Sesame crusted rare Ahi Tuna or Tofu with cucumber ribbons,
seaweed salad, scallions, spicy mayo, wasabi soy glaze & pickled ginger.
So so so delicious. I really wanted to lick the sushi plate but felt that would be mildly inappropriate in public
Last night we had a bunch of our guy friends from freshman year over for Tuesday brewsday
We played games with high quality natty-light (insert sarcasm) and also played Xbox kinect sports game..my arm is really sore from the volleyball
The rest of the day is going to be spent cleaning, (our kitchen table is filled with empty beer cans and the bag of granola I used in my breakfast this morning just to give you a lovely visual)

My favorite game is definitely Just Dance!..But once we get Glee Kareoke that may change:)

This would be Eliza Michelle and I freshman year of high school..so 5 years ago..HAHAHA. They are going to hate me for posting this but its so funny
Last night was so much fun! We don’t get to see each other that often during the year because we all go to different colleges now, so it was fun to catch up! We had a lot of laughs thinking about middle school and high school
Eliza and her mom are amazing entertainers! They created quite the spread for us!
For dinner we had this delicious shrimp dish with tomato and feta
Served with bread for dipping!
And we also had salad with dried cranberries, candied pecans, and a maple vinegrette
For dessert we had ice cream with homemade hot fudge..GAHH so so good! I have had this hot fudge sauce ever since I’ve known Eliza, and I swear it taste better every time I have it!
I had a scoop of coffee ice cream with hot fudge sauce and berries
And of course the hot fudge sauce was sitting right next to me so I kept pouring a little bit on my spoon:) And then I had Eliza remove it from the table so I would stop doing that
She also put out a cheese tray, and we had delicious champagne:)
One of the cheeses was a Truffle cheese from France..it was AH-mazing
The whole night was so much fun, I think we should definitely make it a tradition for the future!
This morning I got up and went to the park with the doggies and my mom for a walk
Duke clearly wanted to drive
First we stopped to get coffee, (because I can’t go a day without it..sad truth), and I got a piece of whole wheat toast with peanut butter! I use to get this for breakfast every morning!
Lucy obviously wanted a bite
I gave her a little bite..even though she needs to loose some weight lol
The park was beautiful this morning..it is crazy how nice it is outside today! it’s almost 50 degrees out..pretty much unheard of for Massachusetts in January
Then I came home and did bodyrock day 5…it was pretty brutal. I’m happy tomorrow is a rest day because my legs are screaming at me!

I plan on going out in Boston with a few of my friends..I’m pretty excited!
2011 was quite the year for me, filled with ups and downs, but mainly ups!
Especially since I rung in the new year with a month study abroad trip to Spain!
I met such an amazing group of friends, and seriously had the best time of my life. It makes me so sad to know that a year ago from today I was about to go on the best trip of my life…WAH. take me back now. please and thank you.
Right after I got back from Spain, I went through sorority recruitment and joined Alpha Delta Pi!
Toga party anyone? Greek week=best week ever.
For spring break I went to Miami with my mom and Nanny to visit my best friend Sam who goes to UMiami!
Oh to be tan again..
I love my Nanny:)
I started out my Summer with an amazing trip to France with my mom!
Such an amazing experience!
In the end of August I moved into my first apartment with my two best friends!
And in the beginning these two were the ones who convinced me to start the blog!
In November I experienced Homecoming week at my school for the first time with my sorority

In November I ran the Turkey Trot with my neighbor Alex
And I just spent 3 nights with my entire family at my Nanny and Papa’s house in New Port, RI for Christmas!
I’d say it was quite the year! And it’s really fun to be able to look back on it all by doing this post:)
I have a list of goals for 2012, but I’ll save that for tomorrows post
