WIAW-Choco-Chia-Berry Overnight Oats

Good Morning and happy WIAW

Breakfast: I’ve jumped back on the overnight oats bandwagon, and boy do I have a creation for you.

Choco-chia-berry overnight oats!

In this super duper chocolately bowl of goodness went

  • 1/4 cup plain greek yogurt
  •  1/4 cup almond milk,
  •  1/4 cup rolled oats,
  • 1 tbsp chia seeds,
  • 1 tbsp cocoa powder,
  • 2 tbsp chocolate protein powder
  • 1/2 cup frozen mixed berries
  •  topped with a teaspoon of almond butter.

Mixed together, placed in the fridge overnight, and voila!

Wow that bowl was amazing. I mean who doesn’t want to feel like they are eating dessert for breakfast?

Note: during christmas season I definitely eat cookies for breakfast..

On a random note, Molly and I took another trip to Costco yesterday and bought a 2lb bag of spinach. It is MASSIVE..it pretty much takes up half our fridge.


After the costco trip I tried to make use of our excess produce by making a huge Salad Beast

In the mix: 2 cups mixed lettuce, 1 cup spinach, 1/2 bell pepper, grape tomatoes, broccoli, leftover spicy peanut chicken, cottage cheese, and mango peach salsa.


Yesterday’s bodyrock was a Fit test to see how much progress you have made from day 1. I forgot to record my fit test day 1, but at least I recorded yesterday’s right?

Here’s what I did

  • Squat Jumps (44)
  • Push Ups (20 regular, 12 girly push ups)
  • Burpees (15)
  • high knees (106)
  • tuck jumps (20)
  • switch lunges (32)
  • straight abs (24)

All of these moves are completed for 50 seconds, and the numbers next to them were how many I completed in 50 seconds. I’m pretty sure these numbers are higher than the first time I tried this! Especially the push-ups!

Then I did the following exercises for 2 minutes straight. I went through the circuit twice for a total of 12 minutes..it took me a little longer than 12 minutes though because I took some rest time in between each exercise.

Refuel Time!

Green Monster time! In the mix: 1 frozen banana, 1/4 cup plain greek yogurt, 1 scoop vanilla protein powder, 1 +1/2 cup spinach, 1 cup unsweetened vanilla almond milk.

I even got Molly to try this and she said it “wasn’t bad” aka she liked it and didn’t want to admit that she liked drinking a green smoothie:)


Last night was Mexican Night! ole ole ole

I made a “skillet mexican chicken” which I wasn’t sure was going to turn out that great but it ended up being delicious! I think I’m going to share the recipe with you later!

We also had homemade guac (courtesy of Molly) and chips and salsa

We did damage on these chips

We were both in a food baby coma after last nights meal..for some reason this always happens to us on Mexican night..maybe we should refrain from buying tortilla chips next time lol

Normally I get hungry again later at night, but I was SO full up until I went to bed

But overall it was a very delicious, and mostly healthy day of eats!

WIAW-the good with the bad

So I’ve really wanted to get back on the “healthy eating bandwagon” and I’ve definitely been eating healthy for the most part, but yesterday’s eats were definitely more of a mix

Which is fine with me, because I’d rather not restrict myself and just eat everything in moderation

Starting out with breakfast!

I had a slice of this banana bread heated up in the toaster oven, with non-fat greek yogurt and blueberries topped with pumpkin butter. And of course I had a cup of coffee x2

so it was the healthy with the not so healthy

For lunch yesterday I went with my friends Eliza and Michelle to Sweet Tomatoes

And I forgot my camera of course, so I snapped a pic with my handy dandy Iphone

I ordered a slice (HUGE SLICE) of traditional and Eliza and I split a ceasar salad. Their pizza is so fresh and I love the thin crust! They use an oil free dough and chopped uncooked tomatoes in replacement for tomato sauce..I think this might be some of my favorite pizza ever!

Throughout the day I also snacked on this apple x2

And I had a handful of pretzel crisps from trader joes that I didn’t snap a picture of

For dinner my mom made a delicious turkey noodle soup! It tasted like thanksgiving in a bowl..yumm

I also had a lot of salad alongside

I filled up my salad plate after I finished this:)

After dinner  I was watching cupcake wars (even though I can’t stand the host guy!) and I got a strong craving for a cupcake..so I settled for some coffee ice cream with blueberries on top

My friend Sam taught me how to eat ice cream out of a mug, its the best way!

And yesterday I also did day one of the 30-day Body Rock challenge..I’m pretty sure I’m going to try to complete the challenge! But more on that later..

Mine is definitely the piece of pizza from Sweet Tomatos!


A quick and easy 30 minute meal


Last night’s dinner use to be a staple once-a-week meal while I was in high school

Teriyaki Salmon with brown rice and stir fried veggies!

This meal is so easy, healthy, and delicious and is ready in less than 30 minutes!

Side note, this makes me think of Rachel Ray and her 30 minute meals..love the concept..can’t STAND her. I use to like her a lot back when I was like..11 and watched the food network more than the disney channel..

Moving on..Here’s how you make it!

First preheat the oven to 375 degrees and get the salmon out. Place a sheet of foil on a baking pan and spray it with non-stick spray (this makes for REALLY easy clean up!) Place the salmon on top, and cover in a store bought teriyaki marinade, like this one!

Bake the salmon for about 25 minutes until just cooked through (you can cook it for less time if you like it more on the raw side)

Meanwhile, bring a pot of water to a boil for the brown rice. I buy the boil-in-a-bag type..easiest way to cook brown rice in my opinion!

Then chop up the veggies of choice..I used bok choy, red pepper, snow peas, and fresh ginger

I love bok choy! I need to start making it more often!

Then stir fry the veggies in a wok pan with some non-stick spray..(or a regular saute pan would work) over high heat for about 5 minutes. I also added in some extra marinade for the veggies

Once the rice is done, the meal is all ready to serve! So so easy!

I also want to share with you my breakfast and lunch this morning because they were delicious!

A whole wheat english muffin with almond butter, banana slices, pumpkin butter, and cinnamon. YUM..And of course I had coffee alongside…The first thing I think about when I wake up in the morning is coffee..#coffeeaddict

For lunch I was planning on having the leftover salmon and stir fried veggies..but SOMEONE (and by someone I mean my mom) gave the left over salmon TO THE DOGS for their breakfast..seriously mom? She left me about a bite worth of salmon.

But I still made a delicious salad

Mixed Greens with baby carrots, leftover stir friend veggies, grape tomatoes, a bite of salmon -__-, and spicy hummus thinned out with a little bit of water for dressing

I also had some white bean and ham soup that my mom thawed out


Back on track eating is going well so far!

More cookies!


So today I baked another 2 batches of cookies! (hence the title of this post..yup I’m original)

I made classic chocolate chip

And I also made my FAVORITE

Peanut Butter Blossoms

And then my friend Eliza took a picture of me in the process

oh hayy.

Before we made cookies, we went out to lunch at Blue Ginger! The last time I blogged about eating there was when I came home for a weekend in October

At lunch, Blue Ginger serves special Asian inspired noodle dishes

I got the Pad Thai with shrimp

Which sadly just wasn’t that good..I barely made a dent in the dish.

Eliza got the Curry noodles, which were a lot better then mine!

Oh and to start we got the Shitake spring rolls

So good! I’ve gotten these spring rolls lots of times! The slaw they come with is the best part! It is tossed in a spicy mustard dressing..so good!

So basically I think we have enough cookies to last a lifetime through christmas

So many cookies!

I’m trying to limit the cookie intake until christmas eve/ christmas because too much sugar makes me feel really blah

But did you know that calories actually don’t count on holidays? cause they dont

But fo realzzz, I try not to worry about how many calories I’m consuming over the holidays..instead I just think of everything in moderation! I eat what I think is worth indulging in (like peanut butter blossoms) and leave out what I don’t think is worth it (like store bought cookies)

And in case you didn’t know..the best time to bake cookies is when your full (like I did right after lunch) so your not as tempted to eat a lot of cookie dough!

I’m planning on making some morning glory muffins to bring to my Nanny’s house for christmas breakfast! I’ll be sure to post the recipe when I make them!

Question for ya!: What are your favorite holiday treats!?



So I have to say, since I’ve been home I feel like I’ve been slacking on the blogging front..because

A. when I’m home I don’t cook as much (aka no recipes to share)

B. I forget to take pictures of my food cause I’m lazy

and C..I’m lazy. did I already say that?..so instead I just share weird pictures of my dogs..sorry.

But ANYWHO so, basically this WIAW is kind of a fail..but bare with me


So this isan’t what I ate for breakfast yesterday (what I really ate was breakfast quinoa, which I was going to share the recipe for but then decided I didn’t like how it turned out -__-)

These would be oats I ate..i dont know a few days ago..with cookie butter on top DELISHH


I went out to lunch yesterday to a yummy place called the cottage, and of course I forgot my camera #fail..but thank goodness for Iphones:)

I ordered the Grilled Mahi Fish Tacos : guacamole, napa cabbage, pico de gallo, baja sauce, corn tortillas, chipotle black beans, papaya salsa

These are awesome! The fish is grilled, not fried which I like..I ate everything on the plate minus the flour tortillas and the sauce I got on the side.

Then after lunch we went to get Pinkberry!

I got a kiddie half coconut, half chocolate (holy amazingness) with chocolate crunchies and pom seeds

And yesterday afternoon I watched The Help for the first time!

So so so good! I normally can’t sit through long movies cause I have issues, but this was amazing!

So I should be showing you our amazing Chanukah Feast! ..but I didn’t take a picture..oh and I’m not really jewish (well technically I’m half)..but I celebrate christmas more then channukah..my mom just makes AMAZING brisket, latkas, and homemade apple sauce once a year..and yup no picture #EPICFAIL

So if I eat the leftovers for dinner tonight I will take a picture and show you! but I definitely stuffed myself with lots and lots of brisket and apple sauce! and one latka of course!

And then I had a piece of a macaroon

WIAW-food on the go

Hi everyone!

Today is Wednesday, (in case you didn’t already know), which means tomorrow is Thursday, which means the  following day I GET TO GO HOME!

I have been a miserable human being this entire week studying for exams..but I have econ tonight, and geography tomorrow and then i’m DONE!done done done done DONE, Celebratory post will commence tomorrow afternoon

Any whoooo,  let’s talk about what I ate yesterday..and thanks to Jen at Peas and Crayons for hosting WIAW!

Breakfast WASN’T OATMEAL! I know, I’m living on the edge right? ..kidding

Instead I had a peace of whole wheat toast with peanut butter and nanner slices, and the rest of the nanner on the side with a little more peanut butter…delishhh

Then I went to take my Women Studies exam

Then I came home, packed food for the day, and headed back out to study all. day. long. …I realize every other college student in the world right now is in the same boat as me..I just like to complain about it because studying just isant my thanggg

I packed up a turkey wrap (made with a whole wheat wrap, turkey, hummus, avocado, tomato and lettuce)..good but not great..I also brought some wheat thins, an apple, and some grapes that I snacked on throughout the day

Dinner is really ugly..just a warning

I heated up an Amy’s pizza pocket in the microwave..and then it exploded….it didn’t taste that bad but it looked narstyyy

The best part of my day yesterday was watching Glee! Holiday episode!

Glee songs seriously make my life..the end.


And the biggest loser season finale!!

The winner John lost 220 pounds! seriously amazing! I normally only watch the finale of the biggest loser, but this season I watched the whole season

WIAW-Lemon Raspberry Cheesecake Overnight Oats!

Hi everyone!

How has your week been so far? Mine has been filled with studying for exams, but I’m all done with classes for the semester! YAY!

So now onto my breakfast yesterday..I managed to make overnight oats taste like Lemon Raspberry Cheesecake!

The night before I combined 1 lemon chobani yogurt, 1/3 cup rolled oats, 1 tsp chia seeds, and 1/4 cup fresh raspberries. I let it sit overnight and topped it with some raspberry preserves in the moring

SO GOOD! you must try this combination!

Snack time:

In between classes I snacked on an 100-calorie pack of cheez-its and an apple

I’m normally not a fan of 100-calorie packs, but I’ve been craving cheez-its for a while, and I know if I buy the full box I will finish the whole thing in a couple of days..so these provide portion control!


For lunch I ate this egg white wrap with spinach and goat cheese, which a lot of you said reminded you of the starbucks version! which is so true! I love that wrap at starbucks, but making it on your own is a good way to save some mula

nom nom nom! eggs an salsa are a super awesome combination!

Then I had some holiday m&m!s

You can assume this little handful was multiplied by 3 throughout the day

Work-out: Yesterday I took a class at the gym in between lunch and dinner called Butts and Guts. holy moly people…lets just say walking hurts today. I can’t remember the last time I was this sore!


Yesterday I made a batch of butternut squash soup, but this time added a sweet potato to it to make it nice and thick!

I ate this alongside a Veggie burger with veggies and hummus

The veggie burger looks kinda narsty, but it tasted delicious!
