So while I was home for break I purchased these 2 books
Of course I left the hard copy of the Hunger Games at home #fail..but I have started reading it! My friend sent me all 3 books that she had downloaded on her computer..I think I need to read more before it gets really good..I’m only about 40 pages in
But ANYways moving onto the cookbook..I have SO many recipes bookmarked, and I finally got around to making one of the recipes..but of course I changed it a little bit so I can call the recipe my own:)
I started out by sauteing 2 carrots, 1 bell pepper, and 1 onion in olive oil with chili powder, cumin, salt and pepper
I cooked the veggies for about 15 minutes over medium heat
Then I added in 2 14oz can’s of whole peeled tomatoes, and 1 tbsp of chipolte peppers in adobo
Crush the tomatoes with a wooden spoon, turn the heat to high to bring the mixture to a boil, and then reduce the heat to low and simmer for about 20 minutes
Then I added in one 24 oz can of drained black beans, and one 14oz can of kidney beans. Then I filled the 24 oz can with water and poured it in the pot to help thin out the soup. I simmered the mixture for another 20 minutes. The final step was to stir in the tomato paste and season to taste.
I used my immersion blender to puree the chili a little bit, but that is optional. If you don’t have an immersion blender, you could transfer about 1 cup of the chili to a blender, and then once blended, pour back into the chili.
This chili is a little smoky from the chipolte peppers in adobo, and has a nice spice to it. Topped with cheese or cilantro makes for the perfect bowl of chili
nom nom nom..I had some more for lunch today..and now there is only about a bowl left..WAH. I’ll be making this again very soon!
Total Time: about 1 hour
- 2 tbsp extra virgin olive oil
- 1 medium yellow onion, chopped
- 2 carrots, peeled and chopped
- 1 bell pepper, chopped
- 2 cloves garlic, chopped
- 1 tbsp chili powder
- 1/2 tbsp cumin
- 1 tsp black pepper
- 1 tsp salt
- 1 tbsp chipolte in adobo
- 1 28 oz can whole peeled tomatoes
- 1 24oz can black beans, drained and rinsed
- 1 14 oz can kidney beans, drained and rinsed
- 3 tbsp tomato paste
Instructions: Heat the olive oil in a medium soup pot over medium heat. Add the onion, carrot, bell pepper, garlic, chili powder, cumin, black pepper. Cook for 15 minutes, stirring continuously. Add the chipolte peppers and tomatoes, and use a wooden spoon to crush the tomatoes, and turn the heat up to high to bring the mixture to a boil. Reduce the heat to low and simmer for 20 minutes. Add in the beans and simmer for another 20 minutes. Stir in the tomato paste and season to taste. Serve warm!

Meet my new Iphone 4s (the white one)..the black iphone 4 is my old phone that I managed to drop in the TOILET when I was out Saturday night..like seriously? I use to make fun of people that dropped their phone in the toilet..and then I did it
Note to self: don’t keep your phone in your back jean pocket while going to the bathroom.
And in case your wondering..insurance does nOT cover mistakes made by idiots (that would be me)..aka water damage or screen cracks
So 220 dollars later..at least I got to upgrade from the 4 to 4s?

Superbowl party here I come:)..I have a lot of friends here who are Giants fans so this should be interesting..especially since last time we played the Giants in the Superbowl they won..not this time baby! (I am such a football fan poser)
On an even more random note..I tried 3 of my new chobani flavors this weekend and the winner was definitely the Passionfruit
Holy awesomeness this flavor is AMAZING. I also tried the blood orange and apple cinnamon..the blood orange was good..the apple cinnamon I wasn’t really a fan of! I thought it would be my favorite too! It just kind of tasted like eating a sour apple to me..bleh!
The past 2 nights I went out to the same mexican restaurant..but failed to take any pictures both times..sometimes when I’m with people that don’t really know about the blog I feel awkward..does this happen to any of you?
But nevertheless I ate lots of chips and salsa, guac, and fish tacos..deelishhh
And this morning’s breakfast is Overnight Pumpkin Butter Oats
topped with a few frozen berries and almond butter..yummm
I don’t have a very eventful day planned..just some grocery shopping and bodyrocking:)

Question for ya!: Have you ever broken a phone? Did it cost you a lot to get a new one?
When I had a blackberry I had to replace my phone a bagillion times and insurance always covered the cost..but the lady at the store told me iphones are more expensive then any other phone to replace..umm YA they are..goodbye to my bank account

Breakfast: I’ve jumped back on the overnight oats bandwagon, and boy do I have a creation for you.
Choco-chia-berry overnight oats!
In this super duper chocolately bowl of goodness went
- 1/4 cup plain greek yogurt
- 1/4 cup almond milk,
- 1/4 cup rolled oats,
- 1 tbsp chia seeds,
- 1 tbsp cocoa powder,
- 2 tbsp chocolate protein powder
- 1/2 cup frozen mixed berries
- topped with a teaspoon of almond butter.
Mixed together, placed in the fridge overnight, and voila!
Wow that bowl was amazing. I mean who doesn’t want to feel like they are eating dessert for breakfast?
Note: during christmas season I definitely eat cookies for breakfast..
On a random note, Molly and I took another trip to Costco yesterday and bought a 2lb bag of spinach. It is MASSIVE..it pretty much takes up half our fridge.
After the costco trip I tried to make use of our excess produce by making a huge Salad Beast
In the mix: 2 cups mixed lettuce, 1 cup spinach, 1/2 bell pepper, grape tomatoes, broccoli, leftover spicy peanut chicken, cottage cheese, and mango peach salsa.
Yesterday’s bodyrock was a Fit test to see how much progress you have made from day 1. I forgot to record my fit test day 1, but at least I recorded yesterday’s right?
Here’s what I did
- Squat Jumps (44)
- Push Ups (20 regular, 12 girly push ups)
- Burpees (15)
- high knees (106)
- tuck jumps (20)
- switch lunges (32)
- straight abs (24)
All of these moves are completed for 50 seconds, and the numbers next to them were how many I completed in 50 seconds. I’m pretty sure these numbers are higher than the first time I tried this! Especially the push-ups!
Then I did the following exercises for 2 minutes straight. I went through the circuit twice for a total of 12 minutes..it took me a little longer than 12 minutes though because I took some rest time in between each exercise.

Green Monster time! In the mix: 1 frozen banana, 1/4 cup plain greek yogurt, 1 scoop vanilla protein powder, 1 +1/2 cup spinach, 1 cup unsweetened vanilla almond milk.
I even got Molly to try this and she said it “wasn’t bad” aka she liked it and didn’t want to admit that she liked drinking a green smoothie:)
Last night was Mexican Night! ole ole ole
I made a “skillet mexican chicken” which I wasn’t sure was going to turn out that great but it ended up being delicious! I think I’m going to share the recipe with you later!
We also had homemade guac (courtesy of Molly) and chips and salsa
We did damage on these chips
We were both in a food baby coma after last nights meal..for some reason this always happens to us on Mexican night..maybe we should refrain from buying tortilla chips next time lol
Normally I get hungry again later at night, but I was SO full up until I went to bed
But overall it was a very delicious, and mostly healthy day of eats!

Can I just say that being home is so relaxing..I just have nothing to worry about, no school work, nothing..and its pretty awesome
The first thing I did when I got home..
cuddled with my doggies of course!
While I unpacked Duke and Lucy were playing tug o war
I also inhaled some crackers and soup when I got home because I was starving (per usual)
Then it was cocktail time
My mom made some homemade Sangria..deeelishhh
And I feasted on the cheese platter she assembled
Cheese and crackers=my weakness
For dinner my mom prepared make-your-own salads, tex mex style!
I was pretty full from the cheese and crackers, but I made myself a semi-small taco salad to enjoy
Okay so it wasn’t that small..and I ate the whole thing..clean plate club member over here people
I feel like I eat SO much more when I’m home..I need to control myself this week because I’m home for a longggg time..like 10 days
I plan on working out every day, because working out=being able to eat more:)
I plan on starting the day out tomorrow with a run at the park with the doggies and some weight lifting action
My brother also informed me that he wants me to make him blueberry muffins..random..but I told him I would make it happen..such a good sister!
Clearly I’m having a ragggginngg friday night over here..
ITS TEEE SHIRT TIMEEEE..kidding. Jersey Shore reference anyone? True story..last year a kid in my dorm would say he was “wearing the shirt before the shirt” in a completely serious tone…guido alert!
Anyways onto yesterdays eats thanks to Jenn over at Peas and Crayons
Starting with breakfast at 7:30am.. (gahh feels like the middle of the night..no more 8am classes for me!)
Regular banana overnight oats with almond butter, PUMPKin butter, strawberries, and some Trader Joes pumpkin granola
Snack time in between classes: (insert imaginary picture of the daily apple and a few almonds)
veggie tray with Goat cheese!! hummus, a rice cake, and a few cracker crumbs to finish off the box, along some soup
Snack time number 2: this was a good one and still forgot to take a picture! Picture this
A few handfulls of these were consumed while preparing for the mexican fiesta
and then my beautiful burrito bowl was created
All of the components I told you about last night..but I’ll tell you again because it was a pretty awesome dinner, brown rice with mexican black beans, mexican slow cooker chicken, sonny’s guac!, and some more cilantro, scallions, and jarred pickled jalepenos on top! SO GOOD
A few notes on what I ate wednesday’s..I’ve noticed being new to this that taking a picture of every single morsel of food that goes into your mouth is REALLY hard..even still on these posts some chocolate chips out of the freezer..or a bite of this, bite of that might go unpictured. It’s also still challenging for me to not be judgemental of what I eat, fearing that one day I might have eaten too much because I use to be so critical and restricting of what I ate..but more on that later.
Anyways I just thought that I would share my thoughts on these types of post..but I know from reading other blogs the curiosity and interest behind daily eats is definitely there, so I will continue to still do these!
I’m going to go do some more school work, and then time to go to work!

We had a mexican fiesta for dinner tonight!

I wish I had taken pictures from the night we came home after being out and decided to make guacamole using our new mortar which was mailed to Molly as a gift from her mommy! We made it the night of her birthday! The pictures of would of been a lot funnier..maybe next time
Sonny’s Guacamole Recipe
2 Haas avocados
2 tbsp chopped tomatos
1 tbsp chopped scallion
1 tsp chopped cilantro
salt to taste
Instructions: Mix all together and serve! …and do this in a mortar if you’re cool enough to own one like we are:)
Me and molly just decided for halloween we were going to dress up as guacamole ingredients..I think it would work
OTHER exciting news to add to the dinner
I pulled out the Crock Pot today (don’t ask what took me so long) and made Mexican Chicken!
Look at this beauty. I hesitantly created my own recipe, but I’m happy to say it worked out. In the crock pot I put 3 chicken breasts (uncooked), 3 tbsp salsa, and 1 tbsp of taco seasoning..I covered all of these with chicken stock just so that the chicken was covered and let this cook slowly on low for 6 hours. I drained some of the broth out, shredded the chicken, and voila!
chicken cooked in the crock pot is so legit.
Some other mexican sides
Brown rice with Lime Juice and Cilantro
Just boil in a bag brown rice, with a squirt of lime juice and a little cilantro.
And Microwave Mexican Black Beans
These are so easy and SO yummy: I just placed one can of black beans, drained but not washed, 1 chopped up red bell pepper, 1 tsp chopped cilantro, some lime juice, 1/2 tsp ground cumin, and 2 tbsp salsa, stirred all together and microwaved for 3 minutes! easy peasy

Mexican fiesta is happening once a week..because its pretty awesome. I can never get anyone to go to Chipotle with me (sob), but I think my version might be even better then Chipotle! Yep I went there
