What I ate Wednesday

Good Morning!

The truth is I totally forgot it was Tuesday yesterday..so we’ll improvise a little bit

Side note: what I ate wednesday posts pretty much never show everything I ate in that day..just a little fyi..but I do my best to document!


Oats in a Greek Yogurt Container..(OIAGYC..? no?)

Pumpkin Butter Overnight Oats..topped with frozen berries, almond butter, and a sprinkle of granola


After doing my bodyrock work out, the only thing I’m always in the mood for lately is a delicious protein packed smoothie

Okay so this isan’t really the smoothie I had yesterday because I forgot to take a picture..but In my smoothie yesterday went 1 frozen banana, 1/2 cup almond milk, 1/2 scoop protein powder, 1/4 cup greek yogurt, and 1 cup of spinach..basically my Green Monster smoothie

I also had a rice cake with almond butter that I failed to take a picture of as well..but it reminded me how much I love that combination!


I snacked on some carrots and hummus (jumbo size from costco) at some point during the day

as well as my new favorite

these are SO good..Molly and I polished off the bag yesterday..good thing we still have a bag of Barbeque left!


Homemade Vegetarian Chili (I’ll post the recipe later today!)

topped with LOTS of cilantro..this is SO so good!

I also made myself a quesdilla alongside with just a whole wheat tortilla and some shredded cheddar cheese

With pineapple salsa from Costco..I literally eat that stuff by the spoonful its so good!


7 ingredient peanut butter chocolate chip cookies

I probably shouldn’t have made these..but I had to celebrate national peanut butter day yesterday somehow! gahh these are so freaking good..I ate 2 of them

I also had a clementine and some grapes while watching all my favorite reality tv shows..Biggest Loser and Teen Mom 2

My roommate tells me I need to start watching better television

What do you think? Teen Mom 2 isan’t high quality television?..kidding.

Like I said, I’ll be posting the chili recipe later today!

What I’m loving lately


So here’s the deal..I tend to eat the same things over and over again until I get sick of them…so what am I obsessing over now you ask?


I’ve been craving smoothies for lunch recently more so than anything else..I normally stick to this Green Monster smoothie recipe

Overnight oats

Overnight oats are back in action..I have been using this method pretty much every morning. I always try to eat my overnight oats slowly so they last longer, and I’m actually so sad when I finish them..truth.

Chocolate Almond Milk

Holy man where has this been all my life?! I was never a huge chocolate milk fan as a kid (mainly because I didn’t like drinking milk in general) but I have been straight up chugging this stuff. I also put some in my coffee this morning..SO GOOD

Apple Slices

Why is eating apple slices so much better than eating an apple whole?..I bought this apple slicer while I was home for christmas and it has been an amazing investment


This is me being too lazy to take a picture of the popchips in my pantry right now. These are seriously so freaking good. And the entire bag has only 3 servings..that’s my kind of serving! And for only 120 calories a serving..it just keeps getting better and better

A New Phone?

Good Morning!

sorry I was MIA yesterday…I was just a little distracted by the fact that I needed to get a new phone

Meet my new Iphone 4s (the white one)..the black iphone 4 is my old phone that I managed to drop in the TOILET when I was out Saturday night..like seriously? I use to make fun of people that dropped their phone in the toilet..and then I did it

Note to self: don’t keep your phone in your back jean pocket while going to the bathroom.

And in case your wondering..insurance does nOT cover mistakes made by idiots (that would be me)..aka water damage or screen cracks

So 220 dollars later..at least I got to upgrade from the 4 to 4s?

moving on..


Superbowl party here I come:)..I have a lot of friends here who are Giants fans so this should be interesting..especially since last time we played the Giants in the Superbowl they won..not this time baby! (I am such a football fan poser)

On an even more random note..I tried 3 of my new chobani flavors this weekend and the winner was definitely the Passionfruit

Holy awesomeness this flavor is AMAZING. I also tried the blood orange and apple cinnamon..the blood orange was good..the apple cinnamon I wasn’t really a fan of! I thought it would be my favorite too! It just kind of tasted like eating a sour apple to me..bleh!

The past 2 nights I went out to the same mexican restaurant..but failed to take any pictures both times..sometimes when I’m with people that don’t really know about the blog I feel awkward..does this happen to any of you?

But nevertheless I ate lots of chips and salsa, guac, and fish tacos..deelishhh

And this morning’s breakfast is Overnight Pumpkin Butter Oats

topped with a few frozen berries and almond butter..yummm

I don’t have a very eventful day planned..just some grocery shopping and bodyrocking:)

Question for ya!: Have you ever broken a phone? Did it cost you a lot to get a new one?

When I had a blackberry I had to replace my phone a bagillion times and insurance always covered the cost..but the lady at the store told me iphones are more expensive then any other phone to replace..umm YA they are..goodbye to my bank account

WIAW-Choco-Chia-Berry Overnight Oats

Good Morning and happy WIAW

Breakfast: I’ve jumped back on the overnight oats bandwagon, and boy do I have a creation for you.

Choco-chia-berry overnight oats!

In this super duper chocolately bowl of goodness went

  • 1/4 cup plain greek yogurt
  •  1/4 cup almond milk,
  •  1/4 cup rolled oats,
  • 1 tbsp chia seeds,
  • 1 tbsp cocoa powder,
  • 2 tbsp chocolate protein powder
  • 1/2 cup frozen mixed berries
  •  topped with a teaspoon of almond butter.

Mixed together, placed in the fridge overnight, and voila!

Wow that bowl was amazing. I mean who doesn’t want to feel like they are eating dessert for breakfast?

Note: during christmas season I definitely eat cookies for breakfast..

On a random note, Molly and I took another trip to Costco yesterday and bought a 2lb bag of spinach. It is MASSIVE..it pretty much takes up half our fridge.


After the costco trip I tried to make use of our excess produce by making a huge Salad Beast

In the mix: 2 cups mixed lettuce, 1 cup spinach, 1/2 bell pepper, grape tomatoes, broccoli, leftover spicy peanut chicken, cottage cheese, and mango peach salsa.


Yesterday’s bodyrock was a Fit test to see how much progress you have made from day 1. I forgot to record my fit test day 1, but at least I recorded yesterday’s right?

Here’s what I did

  • Squat Jumps (44)
  • Push Ups (20 regular, 12 girly push ups)
  • Burpees (15)
  • high knees (106)
  • tuck jumps (20)
  • switch lunges (32)
  • straight abs (24)

All of these moves are completed for 50 seconds, and the numbers next to them were how many I completed in 50 seconds. I’m pretty sure these numbers are higher than the first time I tried this! Especially the push-ups!

Then I did the following exercises for 2 minutes straight. I went through the circuit twice for a total of 12 minutes..it took me a little longer than 12 minutes though because I took some rest time in between each exercise.

Refuel Time!

Green Monster time! In the mix: 1 frozen banana, 1/4 cup plain greek yogurt, 1 scoop vanilla protein powder, 1 +1/2 cup spinach, 1 cup unsweetened vanilla almond milk.

I even got Molly to try this and she said it “wasn’t bad” aka she liked it and didn’t want to admit that she liked drinking a green smoothie:)


Last night was Mexican Night! ole ole ole

I made a “skillet mexican chicken” which I wasn’t sure was going to turn out that great but it ended up being delicious! I think I’m going to share the recipe with you later!

We also had homemade guac (courtesy of Molly) and chips and salsa

We did damage on these chips

We were both in a food baby coma after last nights meal..for some reason this always happens to us on Mexican night..maybe we should refrain from buying tortilla chips next time lol

Normally I get hungry again later at night, but I was SO full up until I went to bed

But overall it was a very delicious, and mostly healthy day of eats!

Overnights Oats making a Comeback

Good Morning!

Somehow I slept until 10:30 this morning..and it feels freaking awesome

Did anyone watch the Golden Globes last night? Cause I watched both the red carpet and the entire award show. And let me tell you my two obsessions

George Clooney I love you so much. When the Decendents won I tweeted in .5 seconds “GEORGE CLOONEY I LOVE YOU”..and when George won best actor I screamed. Yup I did.

And Sofia Vergara..I want to be you

She is drop dead gorgerous, and her acceptance speech last night when Modern Family won was the best speech of the night hands down.

ANYwho onto dinner last night..I made a quick and easy Spaghetti Squash with chicken and spinach

Its not the prettiest looking dish but it tasted delicious! Here’s how I made it.. I cooked the spaghetti squash at 375 for 45 minutes. Then I sauteed cut up chicken pieces oven medium heat with 1 tsp chopped garlic, 2 tsp olive oil, 1 tsp red pepper flake, salt, and pepper.  Once the chicken was browned, I added in about a cup of store bought marinara sauce and a cup of defrosted and drained chopped spinach. I reduced the heat to low and let it cook for a another 3 minutes and then stirred in 1/4 cup goat cheese (because I add goat cheese to everything).  Easy peasy spaghetti squash recipe!

And guess what I just ate for breakfast..

Pumpkin Butter Overnight Oats! I haven’t had the desire to eat oats in a lONG time due to the fact that I had been eating them every morning for ummm I’d say at least 3 months. But because of a recent post on this awesome blog, I was inspired to whip up a batch following her technique!

In the mix

  • 1/4 cup plain greek yogurt
  • 1/4 cup rolled oats
  • 1/4 cup almond milk
  • 1 tbsp chia seeds
  • 1 tbsp vanilla protein powder
  • 1 tbsp pumpkin butter
  • 1/2 mashed banana

I mixed it all last night, put it in the fridge, and enjoyed this morning! The chia seeds thickened from soaking all night..so so good! I’m thinking I’ll probably have this same thing for breakfast tomorrow morning:)

I’m getting ready to complete Bodyrock week 3 on the 30 day challenge, so I’ll post later about my reflections on the challenge so far!

Setting Goals for the New Year?

Happy New Years Eve!!

So guess what?

I had oatmeal for breakfast this morning! For the first time in about 2 weeks..exciting news right? i know.

I used 1/3 cup quick-cooking oats with 3/4 sliced banana, 2/3 cup water, and some cinnamon. Topped with almond butter, pumpkin butter, and bluebs..

This was tasty..but honestly I think I need a break from oats for a while..I kind of overdosed on them:/

So onto my Goals for 2012

It seems strange to me to think of setting goals for the new year because I’ve never done this before..maybe because I feel like its something adults do more than kids? But I am an adult now (turning 20 in april. WEIRD)..so I guess its appropriate to start?

I also feel like the college lifestyle is very carefree and in the moment..but nevertheless I’ve come up with a slightly random list to share!

  • train and run a half marathon

Honestly this one scares me a little..okay a LOT. I’m not a “runner” by any means..but I have enjoyed the past few 5k races I’ve ran and figure doing this is the perfect way to challenge myself! I’m thinking of a half marathon that happens on May 13th..So I probably won’t start actively training until April

  • read The New Rules of Weight Lifting for Women and actually complete the phases (along with measurements to keep track of progress)

I am really determined to do this once I go back to school! Especially since I have a few weeks before I start classes..I have no excuse not to try this out!

  • keep up with blogging..

Ever since starting the blog back in September, I have grown to really love it! I can think of so many things that I’ve started and not stuck with (piano, scrap-booking, drum lessons to name a few..) and I’m really proud of myself for sticking with this!

  • Find ways to promote the blog and start doing Giveaways!

While I mainly write this blog for myself, it is definitely readers that keep me going! So I want to start doing giveaways and hopefully grow my readership over the next year!


  • Test out and share lots of new recipes!

It is no secret that I love cooking, and I am eager to test out lots of new recipes to share with all of you! (I’m sure my roommates won’t mind this goal either)


So there you have it! I’m sure I could think of other things..but I think this list is a good start!

So my plan for the rest of the day is to


get my outfit in order for tonight

drink more coffee..I’m going to need it to make it tonight..I may or may not of fallen asleep at 10:30 last night.. WHO AM I?  I need to go back to school asap.

All I want for christmas is..COOKIE BUTTER


So I’m finally home! Yeaaa buddy (jersey shore..no? k..)

It took me 5 and a half hours with stopping! I was jammin out to Glee tunes the whole way obvvvssss

For breakfast I brought overnight oats in a jar with me!

I failed to take a picture of the oats..since driving and eating oats alone is awkward..but they were delishh. I ate half while driving, and half when I stopped to get more coffee..(DEFINITELY NEEDED)..I was on like..5 hours of sleep..I left at 6am to beat traffic..yea.

Once I got home, my mom had chicken noodle soup waiting for me! she’s the best:)


Then I crawled in to bed for a couple hours..planning on taking a nap..but since I’m incapable of napping (or so it feels like) I just watched some tv while duke kept me company:)


At first he was having some difficulty jumping up into my bed..not like he’s a fully grown golden retriever or anything..but after a few tries he made it up!

hes so handsome:)

After a little while I was bored, and decided I would make a trip to Trader Joes for something I’ve been DYING to try since I’ve seen it featured on so many other blogs!

holy. cow. ;LADKSDJF;A I can’t even express to you how good this is..I seriously had to refrain myself from eating the entire thing in one sitting!

I’m contemplating going back to trader joes and hoarding about 20 jars in my cart..the thing is I’m not really kidding.

My mom said we should give this as gifts to family members..umm YA WE SHOULD..after I get my 50 jars worth

I also got other goodies of coursee

I got the following

  • baby carrots
  • snap peas
  • think thin bars..I haven’t tried these yet but I’ve heard good things
  • string cheese
  • brie cheese (for my daddy-o)
  • hummus
  • quinoa
  • brown rice tortillas
  • greek yogurt
  • cottage cheese
  • honey goat cheese!!
  • butternut squash
  • lettuce
  • mini dark chocolate pb cups..cannot wait to try these!

Trader joes has SO many festive items right now! Unfortunately I’m not a huge fan of the chocolate peppermint combination..(such a bummer right?! I feel like I’m seriously missing out)..but the cookie butter in itself is enough for me!

I made myself a little snack-y to prevent myself from eating the entire jar of cookie butter

Sooo I still haven’t unpacked..

Yes my carpet is pink..yes it’s from when I was 3 years old..

I’m currently watching Ellen with my mommasita right next to our tree! I promised you guys a better picture!
