What I ate Wednesday

Good Morning!

The truth is I totally forgot it was Tuesday yesterday..so we’ll improvise a little bit

Side note: what I ate wednesday posts pretty much never show everything I ate in that day..just a little fyi..but I do my best to document!

Breakfast

Oats in a Greek Yogurt Container..(OIAGYC..? no?)

Pumpkin Butter Overnight Oats..topped with frozen berries, almond butter, and a sprinkle of granola

Lunch

After doing my bodyrock work out, the only thing I’m always in the mood for lately is a delicious protein packed smoothie

Okay so this isan’t really the smoothie I had yesterday because I forgot to take a picture..but In my smoothie yesterday went 1 frozen banana, 1/2 cup almond milk, 1/2 scoop protein powder, 1/4 cup greek yogurt, and 1 cup of spinach..basically my Green Monster smoothie

I also had a rice cake with almond butter that I failed to take a picture of as well..but it reminded me how much I love that combination!

Snack

I snacked on some carrots and hummus (jumbo size from costco) at some point during the day

as well as my new favorite

these are SO good..Molly and I polished off the bag yesterday..good thing we still have a bag of Barbeque left!

Dinner

Homemade Vegetarian Chili (I’ll post the recipe later today!)

topped with LOTS of cilantro..this is SO so good!

I also made myself a quesdilla alongside with just a whole wheat tortilla and some shredded cheddar cheese

With pineapple salsa from Costco..I literally eat that stuff by the spoonful its so good!

Dessert

7 ingredient peanut butter chocolate chip cookies

I probably shouldn’t have made these..but I had to celebrate national peanut butter day yesterday somehow! gahh these are so freaking good..I ate 2 of them

I also had a clementine and some grapes while watching all my favorite reality tv shows..Biggest Loser and Teen Mom 2

My roommate tells me I need to start watching better television

What do you think? Teen Mom 2 isan’t high quality television?..kidding.

Like I said, I’ll be posting the chili recipe later today!

A New Phone?

Good Morning!

sorry I was MIA yesterday…I was just a little distracted by the fact that I needed to get a new phone

Meet my new Iphone 4s (the white one)..the black iphone 4 is my old phone that I managed to drop in the TOILET when I was out Saturday night..like seriously? I use to make fun of people that dropped their phone in the toilet..and then I did it

Note to self: don’t keep your phone in your back jean pocket while going to the bathroom.

And in case your wondering..insurance does nOT cover mistakes made by idiots (that would be me)..aka water damage or screen cracks

So 220 dollars later..at least I got to upgrade from the 4 to 4s?

moving on..

THE PATRIOTS WON!!

Superbowl party here I come:)..I have a lot of friends here who are Giants fans so this should be interesting..especially since last time we played the Giants in the Superbowl they won..not this time baby! (I am such a football fan poser)

On an even more random note..I tried 3 of my new chobani flavors this weekend and the winner was definitely the Passionfruit

Holy awesomeness this flavor is AMAZING. I also tried the blood orange and apple cinnamon..the blood orange was good..the apple cinnamon I wasn’t really a fan of! I thought it would be my favorite too! It just kind of tasted like eating a sour apple to me..bleh!

The past 2 nights I went out to the same mexican restaurant..but failed to take any pictures both times..sometimes when I’m with people that don’t really know about the blog I feel awkward..does this happen to any of you?

But nevertheless I ate lots of chips and salsa, guac, and fish tacos..deelishhh

And this morning’s breakfast is Overnight Pumpkin Butter Oats

topped with a few frozen berries and almond butter..yummm

I don’t have a very eventful day planned..just some grocery shopping and bodyrocking:)

Question for ya!: Have you ever broken a phone? Did it cost you a lot to get a new one?

When I had a blackberry I had to replace my phone a bagillion times and insurance always covered the cost..but the lady at the store told me iphones are more expensive then any other phone to replace..umm YA they are..goodbye to my bank account


My favorite Green Monster Smoothie

Good Morning!..I guess its not really the morning anymore because its almost 11 but whatevs

So yesterday after my Bodyrock day 2, week 2 workout (WOOF it was hard), I made myself a delicious Green Monster Smoothie using these ingredients

In the blender (well in this case my mini food processor because I don’t have a blender in my apartment..this WILL be changing soon) went 3/4 scoop vanilla protein powder (I buy mine from Trader joes), 1 tsp almond butter, 1 banana (frozen), 1 1/2 cup spinach, and about 1 cup vanilla almond milk

See those pretty green speckles?! I have to admit at first I was hesitant to try a Green Monster..because well drinking spinach in a smoothie is a little bizarre..but I’m telling you, you can’t taste the spinach at all and it packs so much nutrition in a smoothie!

I slurped this smoothie down in no time..and it kept me full forevsss..and by that I mean 3 hours

Make this NOW

Green Monster Smoothie

Makes 1 large smoothie

Ingredients:

  • 3/4 of a scoop vanilla whey protein power (or apx 2 tbsp)
  • 1 tsp almond butter (or peanut butter)
  • 1 frozen banana
  • 1 1/2 cup baby spinach
  • 1 cup unsweetened vanilla almond milk

Instructions: Place all ingredients in a blender and blend until smooth! Add more almond milk as needed. Note: If your banana is not frozen, add in a few ice cubes to make the smoothie nice and cold!

Bodyrock Challenge

Hi everyone!

So yesterday I mentioned briefly that I’m planning on par-taking in the 30-day Bodyrock workout challenge!

For some reason whenever I say “bodyrock” I start singing.. “party body rocking in the house tonight”..not sure why

but ANYWHO..I first got the idea to do this challenge from Brittany over at Itty Bits of Balance

In case you don’t know what Bodyrock is (I didn’t until a few days ago) its a series of high intensity circuit work outs created by a lady named Lisa Marie..who side note, my mom’s trainer told me yesterday that she use to be a stripper and then decided she wanted to get out of that profession and make money a different way so she started Bodyrock..interesting right?

So let me tell you people..these work outs are NO JOKE. You do the designated move (say burpees) for 50 seconds, and rest for 10 seconds, and then go directly onto the next move

Every day Lisa Marie posts the new work out, and post a video of her doing all of the moves in case you are confused

What I love about these work outs is that they are short, so if you don’t have a lot of time to work out, there is no excuse not to fit these work outs into your schedule

She also gives you a diet plan to go along with the workout, which I checked out briefly, but it is pretty much just focused on eating a clean, high protein, diet..which I try to focus on anyways!

Yesterday I went to my mom’s trainer for an hour, and then came home to do day 2 of bodyrock..

Let’s just say afterwards I was in need of some recovery fuel, in form of a Raspberry Banana Smoothie!

In the blender when 1/2 banana, 1 plain chobani, 1/2 cup almond milk, and about 1/2 cup raspberries

I’m not normally a smoothie drinker, but it felt really good drinking this after my work out!

I know that for the 30 day challenge you only need to do the designated work outs..which I will probably do most of the time!..but some days if I feel like it I might add in a little extra

WIAW-Lemon Raspberry Cheesecake Overnight Oats!

Hi everyone!

How has your week been so far? Mine has been filled with studying for exams, but I’m all done with classes for the semester! YAY!

So now onto my breakfast yesterday..I managed to make overnight oats taste like Lemon Raspberry Cheesecake!

The night before I combined 1 lemon chobani yogurt, 1/3 cup rolled oats, 1 tsp chia seeds, and 1/4 cup fresh raspberries. I let it sit overnight and topped it with some raspberry preserves in the moring

SO GOOD! you must try this combination!

Snack time:

In between classes I snacked on an 100-calorie pack of cheez-its and an apple

I’m normally not a fan of 100-calorie packs, but I’ve been craving cheez-its for a while, and I know if I buy the full box I will finish the whole thing in a couple of days..so these provide portion control!

Lunch

For lunch I ate this egg white wrap with spinach and goat cheese, which a lot of you said reminded you of the starbucks version! which is so true! I love that wrap at starbucks, but making it on your own is a good way to save some mula

nom nom nom! eggs an salsa are a super awesome combination!

Then I had some holiday m&m!s

You can assume this little handful was multiplied by 3 throughout the day

Work-out: Yesterday I took a class at the gym in between lunch and dinner called Butts and Guts. holy moly people…lets just say walking hurts today. I can’t remember the last time I was this sore!

Dinner

Yesterday I made a batch of butternut squash soup, but this time added a sweet potato to it to make it nice and thick!

I ate this alongside a Veggie burger with veggies and hummus

The veggie burger looks kinda narsty, but it tasted delicious!

Will run for bagel’s and ice coffee!

Hi everyone!

How was your weekend?

So last night I went to my semi formal like I told you, and managed to not take ONE PICTURE. How pathetic is that?! I’m waiting for people to upload pictures to facebook and then I can share a few:)

So this morning I woke up feeling not so great..but still managed to run a 5k with my friend Becki!

see how good I look? yup that’s pretty much how I felt..but we still managed to finish in 28 minutes! The race was to benefit the B+ Foundation..here is a brief bio taken form the websiteThe B+ Foundation is about kids helping kids fight cancer — by providing financial and emotional support to families of children with cancer, and by providing childhood cancer research grants.Source

During the race all I could think about was how badly I wanted an ice coffee and bagel..so afterwards me and Becki went to get the goods!

I got a Whole wheat everything bagel scooped out and toasted with low-fat veggie cream cheese and tomato! and ice coffee on the side..SO SO GOOD. There is nothing like a good bagel sometimes!

Backtracking a bit, here are some of my recent eats!

3 egg whites with spinach and goat cheese, with toast smeared with apple butter alongside

An apple and a Mama Pea Crack Wrap..its just hummus and a mozzarella cheese string inside a whole wheat tortilla and pressed on our mini george forman. Hummus and mozzarella cheese is an AMAZING combination! It is called the “crack wrap” for a reason!

Roasted zucchini and red onion with brown rice and goat cheese

Here is how I roasted the veggies!

I preheated the oven to 375 degrees F and chopped up 3 zucchini and 2 red onions. I tossed them with a tablespoon of olive oil, salt, pepper, and red pepper flakes.

Roasted for an hour in the oven, (I stirred them after 30 minutes)

And they come out beautiful and caramelized!

Me and molly polished off this entire tray..SO good! And if you have never combined roasted veggies with goat cheese you NEED to! It is seriously the best combination ever!

I am making an easy Spaghetti Squash recipe for dinner that I will share with you tomorrow!

No-Bake Pumpkin Granola Bars + new favorite breakfast

So BIG news, I may have discovered a new favorite breakfast this morning! don’t worry its contains oats:)

The Fitnessista’s Breakfast Cookie Dough Cereal!

This kept me full FOREVERRR. like..5 hours! The Fitnessista blog is awesome, I will definitely be eating more of this!

And now onto the No-Bake Pumpkin Granola Bars!

 

I feel like no one really thinks of making homemade granola bars because they are so convenient to just buy. But homemade granola bars are A. better for you and B. SO much cheaper! I do love Larabar’s, but they are $1.19 each! College girl budget people..those will just not fly.

So as I was reading this blog, I was inspired to whip up these babies ( I believed this happened last week around 9:30 in the morning, when I should have been studying for my 5 bagillion exams ) But hey it actually only took 5 minutes! SO easy!

No-Bake Pumpkin Granola Bars!

Servings: Makes about 9 bars,

inspired by Sweetly Fit Blog recipe

Prep time: 5 minutes

Ingredients:

2 cups rolled oats

1/2 cup Protein Powder

1/4 cup Almond Butter (or any kind of nut butter)

1/4 cup dried cranberries (or any other dried fruit)

1/3 cup dark chocolate chips

1/4 cup maple syrup

1/4 cup water

1/4 cup canned pumpkin puree

1 tsp pumpkin pie spice

1 tsp cinnamon

1 tsp vanilla extract

Instructions: Mix all ingredients together in a bowl until fully incorporated. Line a 8 by 8 pan with plastic wrap, and pour mixture into the pan, spreading out evenly.

Chill in the refrigerator for about 30 minutes. Cut into individual bars, and wrap bars separately in plastic wrap, or keep stored in an airtight container

So delicious! Pumpkin and dark chocolate is a great combination:)

And I calculated the nutrition stat’s on Livestrong.com just because I was curious and these were the results!
