WIAW-Choco-Chia-Berry Overnight Oats

Good Morning and happy WIAW

Breakfast: I’ve jumped back on the overnight oats bandwagon, and boy do I have a creation for you.

Choco-chia-berry overnight oats!

In this super duper chocolately bowl of goodness went

  • 1/4 cup plain greek yogurt
  •  1/4 cup almond milk,
  •  1/4 cup rolled oats,
  • 1 tbsp chia seeds,
  • 1 tbsp cocoa powder,
  • 2 tbsp chocolate protein powder
  • 1/2 cup frozen mixed berries
  •  topped with a teaspoon of almond butter.

Mixed together, placed in the fridge overnight, and voila!

Wow that bowl was amazing. I mean who doesn’t want to feel like they are eating dessert for breakfast?

Note: during christmas season I definitely eat cookies for breakfast..

On a random note, Molly and I took another trip to Costco yesterday and bought a 2lb bag of spinach. It is MASSIVE..it pretty much takes up half our fridge.

Lunch

After the costco trip I tried to make use of our excess produce by making a huge Salad Beast

In the mix: 2 cups mixed lettuce, 1 cup spinach, 1/2 bell pepper, grape tomatoes, broccoli, leftover spicy peanut chicken, cottage cheese, and mango peach salsa.

Workout

Yesterday’s bodyrock was a Fit test to see how much progress you have made from day 1. I forgot to record my fit test day 1, but at least I recorded yesterday’s right?

Here’s what I did

  • Squat Jumps (44)
  • Push Ups (20 regular, 12 girly push ups)
  • Burpees (15)
  • high knees (106)
  • tuck jumps (20)
  • switch lunges (32)
  • straight abs (24)

All of these moves are completed for 50 seconds, and the numbers next to them were how many I completed in 50 seconds. I’m pretty sure these numbers are higher than the first time I tried this! Especially the push-ups!

Then I did the following exercises for 2 minutes straight. I went through the circuit twice for a total of 12 minutes..it took me a little longer than 12 minutes though because I took some rest time in between each exercise.

Refuel Time!

Green Monster time! In the mix: 1 frozen banana, 1/4 cup plain greek yogurt, 1 scoop vanilla protein powder, 1 +1/2 cup spinach, 1 cup unsweetened vanilla almond milk.

I even got Molly to try this and she said it “wasn’t bad” aka she liked it and didn’t want to admit that she liked drinking a green smoothie:)

Dinner

Last night was Mexican Night! ole ole ole

I made a “skillet mexican chicken” which I wasn’t sure was going to turn out that great but it ended up being delicious! I think I’m going to share the recipe with you later!

We also had homemade guac (courtesy of Molly) and chips and salsa

We did damage on these chips

We were both in a food baby coma after last nights meal..for some reason this always happens to us on Mexican night..maybe we should refrain from buying tortilla chips next time lol

Normally I get hungry again later at night, but I was SO full up until I went to bed

But overall it was a very delicious, and mostly healthy day of eats!

Yesterday’s Bodyrock workout + 2 Week Update

So you may or may not know that I have been doing the 30 day bodyrock challenge

Before I tell you my feelings so far, I’ll show you what the day 5 week 2 workout consisted of

The 600 Rep Challenge-The following exercises completed back to back

  • 100 High Knee Skips-I used the Jump Rope
  • 100 Lunge kicks (50 each leg) using the Pink Sandbag- I used a 12lb bar since I went to the gym to complete this workout
  • 100 High Knee Skips
  • 100 squats using the Pink Sandbag
  • 100 High Knee Skips
  • 25 Straight Abs
  • 25 V Abs Left
  • 25 V Abs Right
  • 25 Bicycle Abs

This whole work out took me about 15 minutes to complete. I thought the 100 sqauts in a row would kill me the most, but it was actually the lunge kicks that were really challenging for me! They look a little like this

I did 50 on one side, and then 50 on the other side

And the final piece of the workout

Do as many Reps of each exercise in 3 minutes for 6 minutes total

Bicep Curls-My tally 112

Bent Over Row-My tally 98

For both of these I used 8lb dumbells

After completing 2 weeks of Bodyrock (I only missed one of the days) I am feeling really good! My biceps are SO sore from yesterdays 3 minute long bicep curls, but I love the soreness I feel from the work outs!

Here’s what I love about Bodyrock

  • the how-to videos posted everyday of the work outs show modifications in case you don’t have certain equipment
  • the workouts are short, yet very effective
  • You can do all of the work outs at home with minimal equipment
  • Hot boys at the gym will stare at you because they’re impressed that your kicking ass in the gym:)

I have done most of these workouts at home, but yesterday I went to the gym just to get out of the apartment

I really want the cliche “boy meets girl in a gym and they fall in love” to happen to me..I still have 2 1/2 more years..it is GOING to happen

Its hard for me to tell you if I’m noticing results so far because A. I don’t weigh myself in general and B. I didn’t take any measurements

But I’m FEELING a lot stronger already! And my clothes seem to be a wee bit looser

I have been eating clean most of the time, but I think I would be seeing more results if I didn’t come back to college..aka I didn’t come back to partying on the weekends..sorry I’m not sorry though because I love college:)

So no I don’t think I will end up looking like this at the end of the challenge

But that hasn’t been my point of completing this challenge

I decided to complete this challenge mainly because I was looking for a way to change up my workout routine. I love the “challenge” aspect of these work outs, and I feel like I haven’t pushed myself this much in a really long time

I’m thinking even after the challenge is over that I will continue to do Bodyrock workouts weekly, because they are super effective and can be completed in a short amount of time..which is going to be key once Spring semester starts!

Ever since starting these workouts, I have been seriously craving smoothies after I work out

In the mix: 1/4 cup plain greek yogurt, 1 frozen banana, 1/4 cup frozen mixed berries, 1 tsp peanut butter, 3/4 scoop chocolate protein powder, 1 cup almond milk

I actually ate this smoothie with a spoon because it was so thick..yum yum YUM

I have been also meaning to show you my make-shift sandbag I have been using for a lot of the bodyrock workouts

Today is a rest day, and tomorrow I will be starting week 3. I’ll do another full update once I’m done with the full challenge

My favorite Green Monster Smoothie

Good Morning!..I guess its not really the morning anymore because its almost 11 but whatevs

So yesterday after my Bodyrock day 2, week 2 workout (WOOF it was hard), I made myself a delicious Green Monster Smoothie using these ingredients

In the blender (well in this case my mini food processor because I don’t have a blender in my apartment..this WILL be changing soon) went 3/4 scoop vanilla protein powder (I buy mine from Trader joes), 1 tsp almond butter, 1 banana (frozen), 1 1/2 cup spinach, and about 1 cup vanilla almond milk

See those pretty green speckles?! I have to admit at first I was hesitant to try a Green Monster..because well drinking spinach in a smoothie is a little bizarre..but I’m telling you, you can’t taste the spinach at all and it packs so much nutrition in a smoothie!

I slurped this smoothie down in no time..and it kept me full forevsss..and by that I mean 3 hours

Make this NOW

Green Monster Smoothie

Makes 1 large smoothie

Ingredients:

  • 3/4 of a scoop vanilla whey protein power (or apx 2 tbsp)
  • 1 tsp almond butter (or peanut butter)
  • 1 frozen banana
  • 1 1/2 cup baby spinach
  • 1 cup unsweetened vanilla almond milk

Instructions: Place all ingredients in a blender and blend until smooth! Add more almond milk as needed. Note: If your banana is not frozen, add in a few ice cubes to make the smoothie nice and cold!

Burning down the House

Good Morning!

You know what is really annoying to me? The fact that I can’t seem to sleep in past 8:30 anymore! Yes waking up at 8:30 does not count as sleeping in..don’t make fun of me I’m still in college

ANywho..back tracking to yesterday..After Molly and I cleaned the apartment a bit, I got ready to do bodyrock week 2 day 1 workout

It was extremely difficult and I never want to do another burpee as long as I live..too bad I will probably have to do some today when I do week 2 day 2 work out in a bit

After I completed the work out, a nice refreshing smoothie sounded perfect

In the mix: 1/4 cup plain greek yogurt, 1/4 cup frozen mixed berries, 1 tsp peanut butter, 1 scoop chocolate protein powder, a couple ice cubes, and about 1 cup almond milk. I normally don’t make smoothies because I find that they don’t keep me satisfied for very long, but I think the combination of the greek yogurt, protein power, and peanut butter really did the trick! I was full for about 4 hours

For a little snack yesterday I decided to test out the apple slicer I got for christmas!

works like a charm

For our first home cooked meal back in our apartment, I decided to make baked terriyaki tofu with quinoa and stir fried veggies

I cooked the quinoa using 1 cup light coconut milk, 1 cup of water, and 1 tbsp thai red chile paste..it was a good combination!

I baked the tofu at 375 degrees F for about 15 minutes, flipped them over, and put them back in for 5 more minutes

In the last 5 minutes of cooking..somehow this happened

I started to see some smoking around the oven, then I opened the oven and smoke poured out, then the fire alarm went off, and it took us a few minutes to figure out how to turn the fire alarm off

However it wasn’t as bad as the time Molly set off the fire alarm in our entire apartment building by burning a bag of popcorn..this happened around 11:30 at night during finals week..needless to say Molly was highly embarassed and everyone in our building wanted to kill us..but they didn’t know it was us that caused the commotion..

Luckily the Tofu still tasted delicious

Quick stir-fry dinners are definitely some of my favorites

And in case your wondering, the burnt tofu pan is still soaking in my sink right now..I’m hoping that I will be able to clean it sometime in the near future

The only thing I have on the agenda today is another bodyrock workout and a meeting for my sorority at 4

Mother-daughter Dinner

Hii!

So last night I went to my friend Eliza’s house for a mother daughter dinner!

It was me, Eliza, Michelle and all of our mommas

I of course forgot my camera.UGH..but I took pictures of all the delciousness with my Iphone

But first..here’s a picture of  for embarassment purposes

This would be Eliza Michelle and I freshman year of high school..so 5 years ago..HAHAHA. They are going to hate me for posting this but its so funny

Last night was so much fun! We don’t get to see each other that often during the year because we all go to different colleges now, so it was fun to catch up! We had a lot of laughs thinking about middle school and high school

Eliza and her mom are amazing entertainers! They created quite the spread for us!

For dinner we had this delicious shrimp dish with tomato and feta

Served with bread for dipping!

And we also had salad with dried cranberries, candied pecans, and a maple vinegrette

Delicious!

For dessert we had ice cream with homemade hot fudge..GAHH so so good! I have had this hot fudge sauce ever since I’ve known Eliza, and I swear it taste better every time I have it!

I had a scoop of coffee ice cream with hot fudge sauce and berries

And of course the hot fudge sauce was sitting right next to me so I kept pouring a little bit on my spoon:) And then I had Eliza remove it from the table so I would stop doing that

She also put out a cheese tray, and we had delicious champagne:)

One of the cheeses was a Truffle cheese from France..it was AH-mazing

The whole night was so much fun, I think we should definitely make it a tradition for the future!

This morning I got up and went to the park with the doggies and my mom for a walk

Duke clearly wanted to drive

First we stopped to get coffee, (because I can’t go a day without it..sad truth), and I got a piece of whole wheat toast with peanut butter! I use to get this for breakfast every morning!

Lucy obviously wanted a bite

I gave her a little bite..even though she needs to loose some weight lol

The park was beautiful this morning..it is crazy how nice it is outside today! it’s almost 50 degrees out..pretty much unheard of for Massachusetts in January

Then I came home and did bodyrock day 5…it was pretty brutal. I’m happy tomorrow is a rest day because my legs are screaming at me!

The Spaghetti Squash Story

So here’s what happened.

Last night my mom made a delicious family dinner that included her homemade spaghetti sauce, grilled garlic bread, and salad.

We had leftover spaghetti squash in the fridge, so instead of having regular spaghetti I was going to have the spaghetti squash instead so I put the container out by the sink

When I went over to get my plate, I noticed the container was empty. My mom innocently thought I didn’t want it anymore and tossed it down the drain

In my mind I started to freak out “Now I don’t want to eat the pasta because there are too many calories in pasta and less in spaghetti squash”

Let’s backtrack a little bit..

I haven’t alluded to any bad past eating habits on the blog because I don’t normally post anything serious/negative honestly because I don’t really have a guts to be as open as other bloggers..but here we go..

Basically summing it up, when I set out to loose weight the summer going into my senior year of high school it was the only thing I was focused on..well that and raising my precious lucy:)

I went to the gym every.single.day and told myself I was going to start counting calories using livestrong.com and limit my calorie intake to 1200 a day

I know there is a ton of criticism and different opinions on how many calories you need every day to loose weight in a healthy way, but this number for some reason was ingrained in my brain and I stuck to it

After the whole summer I lost about 12 pounds. People were telling me how “skinny” I looked and it made me just want to keep going

I went out and bought a scale at the beginning of that summer, and pretty much weighed myself every day well into my senior year of high school

After those 12 pounds I pretty much reached a plateau but continued to count calories and 1200 was ALWAYS the limit..no exceptions.

This was pretty much just a habit all throughout my senior year of high school, and for senior year prom I did a special “cleanse” 4 days before the 2 proms I went to to make sure I would look extra skinny in my prom dresses…dumb I know

This was me in at one of my proms. The thing was I never got to a point where I was an unhealthy weight for the height I am at all..it was just the actions I was taking were unhealthy for me

Fast forward to college..I tried to maintain the 1200 calories a day..but I was SO much more active and just couldn’t do it. I walked more then I ever have in my life, and went to the gym. I’m pretty sure first semester in college I lost a few pounds rather than gaining the “freshman 15”

Then I went to Spain and for the first time I didn’t have control over what I ate. I basically took a month off of exercising (unless you count dancing in the clubs:)..and while I was 100% secure with everything, I was finally able to step back and realize there is more to life than healthy eating and exercise

Discovering healthy living blogs also made a HUGE impact. I use to eat a lot more processed so-called “diet” food and now my view on the food I eat is WAY different. I would have never let myself eat 300-400 calorie bowls of oatmeal in the morning before because I would be SO worried that it wouldn’t allow me enough calories for the rest of the day

Basically, I’m not going to lie and say that A. I never count calories anymore and B. I’m 100% happy with the way I look. Due to last nights incident, that clearly is not the case. But its something I’m continuing to work on..focusing on living a healthy lifestyle rather than a restricted one

Ten Things Thursday

1. Lately I’ve ditched the oatmeal obsession for breakfast and have fallen in love with Greek yogurt combinations

this mornings breakfast was plain greek yogurt with pumpkin butter, almond butter, bluebs, raspberries, and a sprinkle of granola. SO NOM

2. I went to the best place on earth today..aka Trader Joes..here are the goodies I got to bring back to school with me

Protein powder, almond butter with flax seeds, sunflower seeds, pb pretzels, rainbow trail mix, dark chocolate, and pumpkin butter..dear Trader Joe if your reading, please open up shop in Newark, Delaware. please and thank you

3. After my Nanny read my post this morning, she told my mom that she doesn’t want me turning into an anorexic stripper. LOL.

4. Speaking of bodyrock day 3 I was a sweaty mess after about 20 minutes

You can’t really tell..but my head was pretty much soaking wet…looking gooood..

5. This is what happens when you try to do sit-ups and Duke is in the room

This would be goat cheese hummus..I thought it would turn out amazing..but it was a fail. UGH..don’t you just hate when recipes don’t work out?

8. Last night I passed out at 10, woke up at 2:30am, watched an episode of Chelsea Lately, and couldn’t fall back asleep until 5am. It was extremely annoying.

9. The other day I bought these two books

I’m really excited to try the recipes in the cookbook and share them with you! i normally get annoyed with celebrity trying to be chef cookbooks..but this one looks amazing! And about the Hunger Games..I still haven’t started it but I really want to read it eventually

10. I exchanged a christmas gift from lululemon for this top and I’m obsessed.

I wish lululemon wasn’t so expensive..i’m pretty sure I’m not alone on this thought
