Peanut Butter Banana Protein Soft Serve

before I share with you the Peanut Butter Banana Protein Soft Serve I had last night (woof thats a mouthful of a title right?!), lets look at some eats from yesterday!


PUMPKIN SPICE IS BACK-in case you didn’t know..which you probably did. I’m more a fan of the hot pumpkin spice lattes then the iced but it was 90 degrees and humid yesterday (wtf?) so I couldn’t stand the thought of drinking a hot latte

during the school year i try REALLY hard to not buy coffee and make my own at home but when pumpkin spice season comes around its a little harder to resist!

yesterday’s lunch was a salad with avocado, tomato, scallions, goat cheese, a trader joes salmon burger, and a fried egg on top

i set off the fire alarm trying to cook my salmon burger..that is the 3rd time since I’ve been at school that I’ve set off the alarm. ooopsie


last night for dinner I tried another new recipe! my friend Amy from Mac and Cheese and Peas (best blog name ever right?!) posted a recipe for israeli couscous with roasted eggplant which I bookmarked last week and made last night for dinner! SO delicious..there is cinnamon in the dressing which makes it a little sweet and savory at the same time

i had one of the leftover spinach feta turkey burgers alongside


after dinner last night I digested and went to Zumba! I have rekindled my love for Zumba since I’ve been back at school..its such an amazing work out and so much fun to do!

lindsay and I meant to take a sweaty selfie afterwards but we forget..ugh. next week we will!


after Zumba I came home hungry and decided there was only one thing I wanted


Peanut butter Banana Protein Soft Serve 


  • 1 frozen banana
  • 1/2 cup plain greek yogurt
  • 1/2 tbsp peanut butter
  • 1/2 packet sweetner of choice (I use truvia)
  • splash of almond milk (if needed)


  1. place all ingredients in a food processor and blend until everything is incorporated.

note: I used a mini food processor so I had to add a splash of almond milk to get things all blended together (maybe because the blade on my food processor isan’t as sharp?) but a blender would work just as well!


I’ve seen so many versions for banana soft serve around the blog world and I can’t believe it took me so long to make a version of my own

now i have the urge to go out to the store and buy about 20 bananas just for freezer purposes..

time to go get some school work done!

WIAW-“Fall”ing into good habits!

good morning!

its finally September (and pumpkin spice is back at starbucks EEK) so time for a new WIAW theme!

this month’s theme is about setting goals to try and establish healthy habits for the month (and hopefully continued on throughout the winter!)

I’m not normally one for setting goals, but in the spirit of WIAW i guess i’ll go ahead and list a few!

  1. not skipping my Friday 9am class (failed at this one last week but I’m going to hold myself accountable from now on..damn you thirsty thursdays lol
  2. Plan work outs for the week and stick to them! I know this summer I neglected my work out log but at school it works best for me to plan ahead for the week so I hold myself accountable! So click here if you want to see my work out’s for the week!
  3. Try new recipes! (the amount of recipes I have bookmarked is insaneee) already doing well at this one! (see below)
  4. try to only eat out once a week..this doesn’t include my bagel a week on the weekends ūüôā

I’ll post these same goals every week and keep you updated on how well I’m doing!

now onto yesterday’s eats!


hot oats and coffee are making a come back!

starbucks blonde roast with almond milk and truvia

1/3 cup rolled oats cooked in 2/3 cup almond milk and one sliced banana..topped with maple almond butter and cinnamon sugar grinder from Trader Joes!!

I’m obsessed.


I got busy reading for class and then realized I had about 10 minutes to get dressed, make lunch, eat lunch, and leave for class..

so the fastest thing I could think of was a turkey wrap

in the wrap went turkey, hummus, honey mustard, lettuce, and avocado..all of which I inhaled in approximately 3 minutes but it was tasty!


I always come back at 3:30 on tuesday’s and thursdays starving¬†because I have class from 12:30-1:45 and then another class from 2:00-3:15

my second class is actually Jazz Dance so its not a bad work out!..and maybe that’s why I come home so hungry!

I had 1/2 cup nonfat cottage cheese with red grapes and some trader joes crackers on the side

after this i also had a small piece of leftover vegetable frittata

Work Out

1 hour of kickboxing that KICKED my booty. (thank you Lindsay..) I actually looked like I had just taken a shower after the class was over..tmi? maybe.


One of my goals is to try new recipes so tonight for dinner I made Eat, live, Run’s spinach and feta turkey burgers

with some roasted veggies on the side and I topped my burger with avocado and sriracha

the burgers were SO delicious..I will definitely be making them again! my mouth was also on fire but I do it to myself with my sriracha addition so its all good

and I also have to mention Jenna’s book White Jacket Required..I pre-ordered it off amazon and read it in 2 days. it is definitely a MUST read and filled with a bunch of delicious recipes!

Night-time Snack:

part one


apple microwaved and topped with cinnamon sugar and maple almond butter. I will be repeating this for the next several nights in a row.

part 2 was a rice cake with peanut butter which I failed to take a picture of..clearly I have a nut butter addition!

WIAW-First Day of Classes!

good morning!

happy wednesday!

so summer for me is officially over and I had my first day of classes yesterday!

so here was my day yesterday!

9:00am-wake up and eat breakfast!

in the bowl went about 4oz passionfruit chobani (forgot how much I loved the flavor YUM), half a banana, half a cup of blueberries, and a sprinkle of granola

9:30-11:30-essentially sat on my couch and red blogs this whole time..i have a problem

12:30-1:45: Marketing class..sounds like it’s going to be a mix of an interesting class and a tedious¬†one

2:00-3:00-Jazz Dance Class! I’m so excited that i’m able to take a dance class as my creative arts gen-ed requirement!

3:30-Snack time!

i was starvingggg..all of this walking around at school is making me hangrry

6:00pm -Kickboxing Class at the gym (1 hour) best friend Lindsay teaches work out classes at the gym and HOLY COW it was hard. I wasn’t expecting her to make the first class so challenging by it was!

7:30pm -Dinner

a version of Mexican Sweet Potato Bowls

I already roasted the sweet potatoes in advance, and I wanted to have dinner ready the second I got back from the gym (cause I knew I’d be starving and when i’m hungry I’m like an impatient 2 year old) so I put all the ingredients I would cook on the stove in the recipe link above in the crock pot on high for 4 hours.

i love my crock pot. it gets a lot of use when I’m at school!

i also ate one too many tortilla chips along with dinner

9:00pm-write this post ūüôā I also ate a piece of dark chocolate and a clementine

11:30pm-BED..while watching teen mom..I take it I’m the only one who watches this show right?


time to go read some blogs then go to class!

so sorry I have been the WORST blogger ever since I’ve been back at school..i guess I’ve just been too busy partying studying..:)

some recent eats from the week

shrimp stir fry..i was going to share the recipe but it didn’t turn out that great..mehh

chicken wrap with carrots and hummus

quesadilla and salad for dinner

in the quesadilla went sauteed zucchini, spinach, and garbanzo beans and LOTS of goat cheese

a surprisingly good combo!

and simple eggs and an english muffin for breafkast..eggs topped with sriracha sauce OBVS. this time I actually added 1/4 cup cottage cheese to my eggs for an extra protein boost!


so classes FINALLy start tomorrow..what have I been doing all week you ask? good question..

well I’ve been taking lots of selfies.

so today HAS to be a productive day because I have lots to do!

WIAW-first home cooked meal!

good morning!

happy WIAW!

so I’m finally all moved into my new apartment at school which is pretty exciting! But I should warn you ahead of time that this will not be a traditional WIAW post because i had no idea it was Tuesday yesterday until about..uhh..6pm? so those spoonfuls of almond butter and such were not pictured

but my mom and i drove down to Delaware Monday morning

we left my house at 9am

8 HOURS LATER WE ARRIVED. yes it took us 8 hours when it’s suppose to take 5-6.

wanna know why?

our first spot of traffic was by the GW bridge where we were delayed about 45 minutes..then we drove another 35 minutes with no problem until we came to a stand still. cars were literally parked on the highway for an hour due to a terrible accident that involved 2 trucks

kids were playing street hockey..on the new jersey turn pike!! insane

hi mom!

we got out of our car, met some friends, stretched, soaked in some rays..for about an hour until the traffic started moving..quite the adventure to say the least

when we finally got to Delaware we unpacked and then had a MUCH NEEDED glass of wine

a nice glass of pinot gri for me!

we went out to dinner Monday night to Iron Hill Brewery with my roommate molly and her mom

we started with an order of sweet potato fries which went un-pictured because they were inhaled in about 5 seconds

Molly and I decided to spilt an entree and order an appetizer for our meal

we split the red chile shrimp (which was off their 600 calories or less menu which I think is nice that they have!) which came with a corn and a black bean cake with a lime crema..delish! 

we also split the buffalo chicken not good for you whatsoever but SO BOMB. i love anything that involves buffalo chicken

Tuesday morning we all went to Breakfast at my favorite spot Sinclairs 

I got an egg white omelet with mushrooms, spinach, and pepper-jack cheese..hit the spot! they also have free refills on ice coffee..yup its pretty much amazing. so along with my omelet i had 2 glasses of ice coffee

yesterday was a busy day of errands! which included Target, Costco, and the Grocery store! we are fully stalked on groceries now that’s for sure!

for lunch (which didn’t happen until around 3:30 yesterday) I whipped up some chicken salad

i love putting grapes in my chicken salad yum! I had some on top of mixed greens with sirracha hot sauce as my dressing ..obviously. my mouth was on fire but it was so worth it

for our first meal in our new apartment we decided to have a potluck dinner with two of my good friends who live right across the way!

molly set in the table in true college fashion..paper plates and bowls that don’t match and silverware..oh and hi to molly in the background!

Molly made the salad which had scallions, cucumber, and grapes, and a bowl of goat cheese on the side!, i made grilled chicken with a mango avocado salsa, my friend becca made pasta salad, and my friend kristen brought fruit for dessert!

everything was so delicious! except a few pieces of the chicken weren’t cooked all the way cause I’m not use to an electric stove! (oh and I also set off the fire alarm..just welcoming myself to the neighborhood!)


so not a traditional WIAW but I still managed to remember to snap pictures of most of my eats!

it is so crazy being all moved into my new apartment but I LOVE where I’m living this year and I can tell it is going to be a great year!

but I still don’t understand how i’m ¬†already a junior in goes by at WARP speed..i’m going to make sure this year goes by slowly..wish me luck on that one!

Classic Family Dinner


i was about to say good morning and then realized its fact on yesterday’s post I said good morning and it was around 4pm when i posted it..uhhh whoops

yesterday morning for breakfast I enjoyed a batch of OIAJ

for some reason it took me an unusually long time to finish this jar..i think i’ve had it since the beginning of the summer..woah baby!

these were overnight oats in a jar!


in the mix

  • 1/2 banana
  • 1/3 cup oats
  • 1/3 cup almond milk
  • 1/2 tbsp chia seeds
  • a spoonful of plain greek yogurt
  • 1 drop stevia
  • pinch of cinnamon

when ¬†making oats in a jar you should always have at LEAST a tablespoon of nut butter left at the bottom of the jar..thats what makes them so delicious ūüôā


whenever we get to the chance to eat dinner as a family at home we have to make sure its a meal to please all of our palates

my brother and my dad are more meat and potatoes kind of people

and my mom and I would rather load up on chicken or fish and lots of veggies

so combining the both are go to Sunday dinner is normally roasted chicken, roasted potatoes (a combination of golden potatoes and sweet potatoes), green beans, corn, and some kind of salad 

last night my mom set the table so it looked all purrrty


with olympic inspired napkins

and dinner was served!


roast chicken breast, fresh sauteed corn off the cob, roasted sweet potatoes, and green beans with homemade pesto


with some fresh sliced tomatoes, avocado, and cucumber alongside


sprinkled with goat cheese because i’m not the only one in my family who is obsessed

we always argue over who picks the most goat cheese out of the dad normally accuses me..he’s definitely not right though..


such a delicious meal followed by some chocolate chips and a little bit of ice cream

my family has never been big on desserts, except we all love our ice cream (well except for my mom cause she’s a weirdo..jk mom love you)

i spent 5 hours on the couch watching olympics

i was SO happy for the pair of olympic U.S. divers that won the silver medal their first time competing in the olympics!

i was also so sad for Jordyn Wieber! i think the rules are stupid and that they should have the top 25 scoring gymnasts compete in the all-around competition not just take the top 2 from each country

well that was my olympic rant..time to go make some lunch!

Vegetable Burritos

good morning!

so I kind of have an obsession with cook books and food magazines..every time I look through either one I dog ear every single recipe I want to try (which is basically all of them)

in a recent cooking light magazine I dog ear’d (i could just say “market” but i like making up my own words..) numerous recipes that i wanted to try

the problem is I do this a lot and don’t get around to testing out the recipes! so my new goal for myself is to try more new recipes

oh and also since i can’t leave anything alone i like to change recipes i try to make them my own

so i came across these “vegetable and rice burritos with quesadilla cheese” in the latest cooking light magazine issue and was immediately intrigued..but i’m sorry..what is quesadilla cheese? so I made some changes..

here’s how you make my version: Vegetable Burritos

to prepare the rice heat a small soup pot over medium heat with a tsp of olive oil

next add in 1 tsp garlic and 1/3 cup long-grain white rice

stir the rice around for a couple minutes until the rice becomes slightly brown

add in 2/3 cup water and 1 tsp of salt, and bring the mixture to a boil. Once the rice is boiling, cover, reduce the heat to medium low and set the timer for 15 minutes. After 15 minutes turn the heat off and let the rice sit covered for a few minutes.

In the meantime prep the veggies!

chop up 1 small onion, 1 cup white mushrooms, 3/4 cup grape tomatoes, 1 small zucchini, 2 ears of corn, and 2 cloves of garlic

Heat a Medium sized non-stick saute pan over medium high heat with 1 tbsp olive oil

first add in the onion and garlic 

saute for a few minutes until the onions become translucent and add in the chopped mushrooms, zucchini, and 1 tbsp chili powder, 1 tsp red pepper flakes, and 1 tsp salt

cook the mixture, stirring frequently, for about 4 minutes

next add in the chopped tomatoes and corn

cook for another 2 minutes and then turn off the heat and set the vegetables aside

Next prepare the delicious sauce to put on the  bottom of the burriots

in a small bowl combine 1/4 cup greek yogurt (i used non-fat), 1 tbsp chopped cilantro, 1 tsp fresh lemon juice, 1/4 tsp red pepper flakes, 1/2 tsp salt, and 1 tsp siracha hot sauce (option but recommended!)

stir stir stir!

mm yum! set the sauce aside

Once the rice has sat for a few minutes, add in 1 tsp diced jalapeno pepper

i promise its not too spicy!

now its time to make the burritos!

take a 6-8” whole wheat tortilla and spread about a tablespoon of the greek yogurt mixture on the bottom

next add about 1/4 cup of rice

then the veggie mixture

and finally the cheese! I used reduced-fat shredded mexican cheese but any shredded cheese of choice would work!

all wrapped up into burrito shape!

if you’re making 4 burritos at one time go ahead and prepare all the burritos up to this point before turning on the pan to cook them

but since I was the only one eating them ( all for me muhahaha) I just made the one and used the same skillet i cooked the veggies in cleaned out, and heated back to medium high heat with some non-stick cooking spray

cook the burritos for about 3 minutes per side

flip over to let the other side get nice and crispy!

now time to EAT

so good!

i made some quick guac to eat along side (highly recommended!) just half an avocado with salt, lemon juice, and cilantro

i made the leftovers into two more burritos for my mom and I for lunch today but added in some black beans and avocado inside the burrito which made them even more delicious!

mm so cheesy and yummy and WAY healthier than veggie burritos at any fast food restaurant


Vegetable Burritos

Servings: 4 Burritos

Total Time: 40 minutes


For the Rice:

  • 1 tsp olive oil
  • 1/3 cup long grain white rice
  • 1 garlic clove, chopped
  • 2/3 cup water
  • 1 tsp salt
  • 1 tbsp chopped jalapeno pepper

For the Greek Yogurt Sauce:

  • 1/4 cup non-fat plain greek yogurt
  • 1 tbsp cilantro, chopped
  • 1 tsp lemon juice
  • 1/4 tsp red pepper flake
  • 1/2 tsp salt
  • 1 tsp sirracha hot sauce

For the Vegetables

  • 1 small onion, chopped
  • 2 ears of corn, cut off the cob
  • 1 small zucchini, chopped¬†
  • 3/4 cup grape tomatoes, halved
  • 1 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp red pepper flakes
  • 1 tsp salt

For Burrito Assembly: 

  • 4 (6-8 inch) tortillas
  • 1 cup shredded mexican style cheese (sargento is my favorite to buy)
  • optional: avocado or black beans added to the burrito

Adapted from Cooking Light Magazine


  1. For the rice heat a small sauce pan over medium high heat with 1 tsp olive oil.
  2. Add in the rice and garlic and cook for 3 minutes, stirring constantly.
  3. Add in the water and salt and bring to a boil.
  4. Once at a boil, cover the pot, reduce the heat to low, and simmer for 15 minutes.
  5. After 15 minutes, turn the heat off and let stand for 10 minutes.
  6. Fluff with a fork and add in the diced jalapeno.
  7. Combine all ingredients for the greek yogurt sauce in a bowl and set aside.
  8. Heat a large non-stick skillet over medium-high heat with 1 tbsp olive oil.
  9. Add in the onion and garlic and cook for a few minutes, stirring frequently.
  10. Add in the zucchini, mushrooms, salt, red pepper flake, and chili powder. Cook for about 4 minutes, stirring frequently.
  11. Add in the corn and tomatoes, cook for 2 more minutes, turn the heat off, and remove the veggies from the pan. Rinse out the pan to cook the burritos in.
  12. Assemble the burritos by layering the greek yogurt sauce, then about 1/4 of the rice mixture, 1/2 cup veggies, and 2 tbsp shredded cheese and roll up into a burrito. (repeat for the other 3 burritos)
  13. Heat the large non-stick pan over med-high heat with non-stick spray and cook the burritos for about 3 minutes per side until each side is nice and brown
  14. serve immediately (preferably with some guac alongside!)


These burritos would also be delicious as burrito bowls! mm maybe next time I make them I’ll do that!

on a totally random note I’ve been glued to my T.V. ever since the Olympics started!

i’m completely obsessed.

gymnastics and diving are my favorite but I love them all!

so time to go watch more!

gymnastics GAH I love it so much! how cool would it be to be an olympic gymnast?! pretty freaking cool if you ask me..maybe in my next life i’ll make that my goal?
