good morning! how was everyone’s long weekend?
this past weekend I watched about 30 episode of The Hills re-runs on MTV
i wish I was exaggerating.
but come on don’t you just hate to love that show? The episode that makes me most angry is the finale when they show you its ALL scripted. I mean obviously I thought their weekend trips to cabo, cancun, vegas, etc were just all planned themselves cause they were all such GREAT friends..
and I never understood the whole Audrina and Ryan Cabrera relationship so I hope that was all scripted
but moral of the story is that if any reality tv show is interested in filming my life at school and paying for me to go on weekend getaways with my friends just LET ME KNOW..cause i would totes be down
okay that rant is over..moving on to FOOD
I put a few of my trader joes goodies to use and made semi-homemade mac and cheese with peas and chicken sausages
i bought a box of the white cheddar shells from trader joes and then added in spinach and feta chicken sausages(from costco) , frozen peas, and some shredded mozzarella cheese to make it extra cheesy and delicious..i love jazzing up boxes of mac and cheese!
and last night for dinner made trader joes butternut squash ravioli (SO GOOD HELLO FALL I LOVE YOU)
i cooked the ravioli according the package instructions and in a separate pan melted some butter and cooked up baby spinach and frozen peas with a pinch of nutmeg, salt, pepper, and red pepper flake. I added the cooked ravioli to the spinach and peas and voila! Topped off with a little bit of honey goat cheese from trader joes..YUM
I also made this Vegetable Frittata
I’m going to share the recipe with you but its SO easy and SO adaptable so its more of a method than a recipe
Start off by gathering together about 4-5 cups of raw chopped veggies of your liking
I went with 1/2 red onion sliced, 1 clove garlic, 1 red bell pepper, 1 yellow zucchini (how cool right?!), and 1 cup mushrooms
in a medium non-stick skillet heat 1 tbsp of olive oil OR coconut oil
I like to get the onions and garlic cooking first but if your feeling lazy and want to cook all the veggies together go right ahead!
i let the onions and garlic cook for a couple minutes and then added in the zucchini and red peppers
stir consistently for a few minutes and then add in the spices
spice up your life! or your veggies, or a combination of both. in the pan went 1 tbsp red pepper flakes, 1 tbsp italian seasoning, 1 tsp black pepper, 1 tsp salt
mixed all together and then I added in the last two vegetables: the mushrooms and a cooked diced sweet potato
allow this all to cook for a couple more minutes while you prep your eggs
3 whole scrambled eggs + 1 cup liquid egg whites-you could go ahead and use 8 whole eggs instead it was just what i had on hand (note to self..buy more eggs!)
pour the egg mixture over the veggies
i added a few baby spinach leaves on top for some added color (totally optional though)
I also added 1 cup shredded mozzarella cheese (which i don’t think should be optional BUT its totally up to you)
I would also recommend goat cheese, gouda, feta, cheddar, pepper jack..the list can go on and on!
I placed the whole skillet in the oven at 350 degrees F for about 5 minutes..just until the cheese is melted and the eggs are cooked through
So delicious and so easy! Molly (my roommate who gets spoiled by my cooking 🙂 ) and I had no problem finishing most of this off for lunch on Sunday..And since its so healthy you can eat large portions 🙂

Easy and Healthy Vegetable Frittata
Servings: 3-4 main servings (or 6-8 if your serving it alongside something else)
Total Time: 20 minutes
- 1 tbsp olive oil or coconut oil
- 1 clove minced garlic
- 4-5 cups chopped raw veggies of your liking (i love zucchini, mushrooms, red peppers, onion)
- 1 small sweet potato cooked, peeled, and chopped**
- 1 tbsp italian seasoning
- 1 tbsp red pepper flakes
- 1 tsp salt
- 1 tsp pepper
- 3 eggs
- 1 cup liquid egg whites
- 1 cup shredded cheese of your choosing (mozzarella, goat cheese, pepper jack, gouda, etc)
- preheat the oven to 350 degrees F
- in a medium sized non-stick skillet, heat the olive oil or coconut oil
- add in the garlic clove + veggies and cook for about 5-7 minutes, stirring frequently
- to the pan add the italian seasoning, red pepper flakes, salt, and pepper and stir to combine
- add in the cooked sweet potato
- in a separate bowl combine the 3 scrambled eggs with 1 cup liquid egg whites
- pour the egg mixture over the veggies and sprinkle cheese on top
- place the whole pan in the oven for 5 minutes (until cheese is melted and eggs are cooked through). Serve Warm
**note: to cook the sweet potato poke holes in the potato with a fork and place in the microwave for 7 minutes on high
this is also a great make-ahead meal to have on hand for breakfast, lunch, or dinner for the week!

so before I tell you about my meal prep suggestions..I need to tell you what I did last night..
got fro yo DUH. I’m going to try reallllly hard to limit my fro yo consumption this year (damn you yogo berry and all your flavors and topping choices)..but I’ve been craving it for the past few days and when my roommate agreed to go with me I couldn’t turn it down
i got a mix of cheesecake, chocolate, and coffee flavored fro yo and had an assortment of pb chips, white chocolate chips, mini m &m’s, and fruit. amazing.
now onto meal prep..I know that life as a college student, full time employee, etc gets extremely busy and I think one of the key’s to keeping a healthy diet is taking one day out of the week to do some meal-prep
two of my favorite healthy foods to prep for the week are a batch of roasted veggies and a batch of roasted sweet potatoes
yesterday after my grocery shopping trip I made a batch of each
for the veggies I did 3 zucchini and 1 red onion chopped up and tossed in 1 tbsp olive oil, 1 tsp salt, 1 tsp pepper, and 1 tsp red pepper flake (optional but recommended!)
roasted at 375 degrees F for 35-40 minutes (stirred every 15 minutes or so) until slightly browned
Now you just have to resist eating the whole batch in one sitting
Here are some of the ways I love to incorporate the roasted veggies I make
- cooking up some grains (pasta, quinoa, cous cous, brown rice) and mixing in roasted veggies with some marinara sauce and goat cheese
- eating alongside protein of choice (grilled chicken, salmon, shrimp..also great to prep-ahead on the weekends!)
- eating with 2 eggs over easy and roasted sweet potatoes (see below)..this has become my new favorite meal!
- as a salad topping
So versatile and so healthy! veggies can be annoying to prep on a daily basis so prepping them in advance is so important to make sure you are still eating healthy on a busy schedule!
now onto the roasted sweet potatoes
4 sweet potatoes (peeled and chopped) and tossed with 1 1/2 tbsp olive oil, 1 tbsp salt, 1 tbsp pepper, 1 tbsp red pepper flake..roasted at 425 degrees F for 35-40 minutes..stirring every 15 minutes until brown around the egdges
(other delicious spices to add: a pinch of cinnamon, chili powder, cumin, paprika..if your feeling fancy!)
Great ways to eat the taters during the week!
- alongside eggs and roasted veggies! (my dinner last night! see below)
- on top of salads
- mixed with 1/2 cup cottage cheese and some hot sauce
- alongside protein of choice (chicken, fish, steak, turkey burgers) with some barbecue sauce
- incorporated into mexican sweet potato bowls ..my dinner tonight! (so I prepped ahead..see what i did there? 🙂 )
dinner last night=my favorite meal ever
1 cup roasted sweet potatoes, 1 cup roasted veggies, 2 eggs cooked over easy (drippy yolk is da BOMB), 1 oz goat cheese (or maybe a littttle more..) and sriracha hot sauce
I recommend adding avocado on top of but I was feeling lazy last night..I know cutting into an avocado takes SO much effort…
so to all you college students out there who say they don’t have time to cook..if you take 1 HOUR out of your Sunday to prep these 2 recipes you will not be sorry!
and speaking of college..today is my first day of classes! i have marketing class at 12:30pm and Jazz Dance at 2:00pm
yup Jazz Dance counts as a 3 credit class..boo yah!

some recent eats from the week
shrimp stir fry..i was going to share the recipe but it didn’t turn out that great..mehh
chicken wrap with carrots and hummus
quesadilla and salad for dinner
in the quesadilla went sauteed zucchini, spinach, and garbanzo beans and LOTS of goat cheese
a surprisingly good combo!
and simple eggs and an english muffin for breafkast..eggs topped with sriracha sauce OBVS. this time I actually added 1/4 cup cottage cheese to my eggs for an extra protein boost!
so classes FINALLy start tomorrow..what have I been doing all week you ask? good question..
well I’ve been taking lots of selfies.

so I’m finally all moved into my new apartment at school which is pretty exciting! But I should warn you ahead of time that this will not be a traditional WIAW post because i had no idea it was Tuesday yesterday until about..uhh..6pm? so those spoonfuls of almond butter and such were not pictured
but anywho..so my mom and i drove down to Delaware Monday morning
we left my house at 9am
8 HOURS LATER WE ARRIVED. yes it took us 8 hours when it’s suppose to take 5-6.
wanna know why?
our first spot of traffic was by the GW bridge where we were delayed about 45 minutes..then we drove another 35 minutes with no problem until we came to a stand still. cars were literally parked on the highway for an hour due to a terrible accident that involved 2 trucks
kids were playing street hockey..on the new jersey turn pike!! insane
we got out of our car, met some friends, stretched, soaked in some rays..for about an hour until the traffic started moving..quite the adventure to say the least
when we finally got to Delaware we unpacked and then had a MUCH NEEDED glass of wine
a nice glass of pinot gri for me!
we went out to dinner Monday night to Iron Hill Brewery with my roommate molly and her mom
we started with an order of sweet potato fries which went un-pictured because they were inhaled in about 5 seconds
Molly and I decided to spilt an entree and order an appetizer for our meal
we split the red chile shrimp (which was off their 600 calories or less menu which I think is nice that they have!) which came with a corn and a black bean cake with a lime crema..delish!
we also split the buffalo chicken eggrolls..um not good for you whatsoever but SO BOMB. i love anything that involves buffalo chicken
Tuesday morning we all went to Breakfast at my favorite spot Sinclairs
I got an egg white omelet with mushrooms, spinach, and pepper-jack cheese..hit the spot! they also have free refills on ice coffee..yup its pretty much amazing. so along with my omelet i had 2 glasses of ice coffee
yesterday was a busy day of errands! which included Target, Costco, and the Grocery store! we are fully stalked on groceries now that’s for sure!
for lunch (which didn’t happen until around 3:30 yesterday) I whipped up some chicken salad
i love putting grapes in my chicken salad yum! I had some on top of mixed greens with sirracha hot sauce as my dressing ..obviously. my mouth was on fire but it was so worth it
for our first meal in our new apartment we decided to have a potluck dinner with two of my good friends who live right across the way!

Molly made the salad which had scallions, cucumber, and grapes, and a bowl of goat cheese on the side!, i made grilled chicken with a mango avocado salsa, my friend becca made pasta salad, and my friend kristen brought fruit for dessert!
everything was so delicious! except a few pieces of the chicken weren’t cooked all the way cause I’m not use to an electric stove! (oh and I also set off the fire alarm..just welcoming myself to the neighborhood!)
so not a traditional WIAW but I still managed to remember to snap pictures of most of my eats!
it is so crazy being all moved into my new apartment but I LOVE where I’m living this year and I can tell it is going to be a great year!
but I still don’t understand how i’m already a junior in college..college goes by at WARP speed..i’m going to make sure this year goes by slowly..wish me luck on that one!

Saturday morning I woke up around 7am (SO early for me I’m such a baby with sleep lol) and drove over to the hotel for breakfast!
the breakfast was sponsored by Wild Harvest and everything was delicious..they had banana nut muffins and fresh fruit
mini yogurt parfaits with pomegrante granola..so good!
COFFEE i loved how the milk and sugar station was set up! they also had stevia as a sweetner option which was pretty exciting!
i had some potato pepper hash, a maple turkey sausage, and a greek inspired egg bake..everything was delicious!
the crossfit trainers were very attractive which is always a plus 🙂 ..I tried taking a picture without being too sketchy so that’s why the picture is so blurry
the trainers taught us the proper way to do a squat and then we did a mini 5 minute AMRAP work out of 7 squats and 15 jumps (AMRAP just means as many reps as possible) ..it was only 5 minutes but it definitely got my heart rate up! and my quads are sore today from all those squats!

the first session I went to was hosted by Gretchen
I learned a lot from this session on how to improve my photos! it was such a helpful session for me
I went to 3 other sessions throughout the day that were all really helpful and taught me a lot about blogging!
we broke for lunch around 12 which was a delicious buffet spread!
I loaded up my plate!
a delicious salad with goat cheese!! (they must of known I was coming..:) ), a tomato and avocado salad which was SO good, chicken, and a lentil chili which reminded me of an indian dish I’ve had that was so delicious!
i went back for some more lentils
with a piece of pita bread for dipping
Kelly also gave me a fitfluential tank top which I was SO excited about since I’m a fitfluential ambassador!
i want to wear it every single day
in the afternoon there was a keynote speaker from Wild Harvest who gave us great tips on improving recipes to make them more reader friendly and accessible
overall I took so much more from HLS than I ever could of imagined. I really hope I get to go next year as well because its such an amazing group of women and I left feeling so inspired and motivated to keep blogging
One important thing I took away from all the sessions I attended was to embrace the blogging community and to reach out to other bloggers as much as possible..it is such a supportive community and it is not about competition between blogs its about supporting everyone and meeting great friends along the way..or as they call them “blends” aka blogger friends 🙂
I don’t think blogging will be my life long passion although I admire those bloggers who are so passionate about it..but its something that I love to do and has really become a hobby for me
I’m such a people person and i loved finally being able to meet all the bloggers in real life who I felt like I already knew so much about from reading their blogs (sounds really creepy I know, but its so true!)
alright I wanted to take a break from packing to do the last part of my recap but I better get back to it
I still can’t believe i go back to school tomorrow..crazy how fast time goes by
I’ll report back when I’m in Delaware…eeek!
so I just got home from a crazy and amazing two days at the Healthy Living Summit!
This year was my first year attending and I am SO happy I did!
i have SO much to tell you about but I have to break it up cause its way to much for one post so lets start with Friday
we walked about a mile from the hotel to Flour Bakery
we all started taking pictures immediately and everyone was giving us funny looks lol they probably just though we were crazy tourists or something 🙂
i love the chalk board menus at Flour Bakery! i’ve been to the location in south boston before and I’ve been obsessed ever since! I was really hungry when I got there so I decided on the Chicken and Avocado Sandwich
the sandwich had roasted chicken, avocado, jicama, and lettuce..SO bomb. i mean everything and anything with avocado is usually pretty darn tasty
after lunch we all walked back, checked in, and picked up our SWAG BAGS ..can you tell I was excited for this part?
Reebok was one of the sponsors this year so we got FREE SNEAKERS
check out all the other swag I got!
lots of coupons for free yogurts, and free almond milk from almond breeze..score!
and an awesome HLS tee-shirt and head band from Five Bamboo..the material is so soft I’m in loveee
Friday night was the kick-off Cocktail Party (I really want the picture that Sara has on her camera of the two of us at the cocktail party to show you but she hasn’t put it up yet for me to steal from her!)
Sara and I were a couple of the first people to arrive…i mean who says being fashionably late is even cool anymore right..?
the cocktail party had quite the spread of delicious food!
local cheeses, veggies, and delicious dips and spreads!
i fixed a plate to munch on alongside my cocktail
local goat cheese (i mean we all know how much I LOVE goat cheese) veggies, crackers, a cranberry chutney that was amazing! and a spinach ranch dip
along with the cheese and veggie spread, there was a Popcorn and chocolate table, and mini whoopie pies!
popcorn and chocolate should always be paired together..just saying
i tried a red velvet but I wish I tried all three because it was amazing! the other two were chocolate and lemon poppyseed
I spent the rest of the night chatting and having a great time getting to know so many bloggers who I’ve been dying to meet!
Part 2 will hopefully come tomorrow! I say hopefully because I only have tomorrow to pack up my whole life (okay I’m being dramatic but my whole wardrobe, bedding, etc, etc) because i’m leaving for school Monday morning!
which sadly means I don’t think I’ll be making it to the farewell brunch and walk tomorrow morning at HLS..but the past 2 days have been so incredible so while I’m sad to miss out on the final part I already feel like i’ve taken so much from the whole experience

so the past 2 days for lunch I’ve had the same thing and it could be my new favorite meal ever (as in I could eat it everyday and be perfectly happy)
I fried 2 eggs in coconut oil (I just take a basting brush and brush the pan with it so probably about 1 tsp of coconut oil) and then eat the fried eggs over leftover roasted veggies heated up topped with some avocado, goat cheese, and sirracha sauce
SO BOMB..best lunch ever. i wish i had more leftover roasted veggies because I would have the same thing today again!
yesterday afternoon my mom and I headed to Newport, RI to visit my Nanny one more time before I go back to school
in the afternoon I went out and had some fun taking pictures with my camera
(aka pretending to be a photographer when in reality I have no clue what i’m doing)

for dinner last night my mom and I made a Tuna Nicoise platter
you better believe i went back for seconds! the perfect summer meal!
we are having a small barbecue later with people from the gym my mom and I go to so I’m about to start cooking!
