before I share with you the Peanut Butter Banana Protein Soft Serve I had last night (woof thats a mouthful of a title right?!), lets look at some eats from yesterday!
PUMPKIN SPICE IS BACK-in case you didn’t know..which you probably did. I’m more a fan of the hot pumpkin spice lattes then the iced but it was 90 degrees and humid yesterday (wtf?) so I couldn’t stand the thought of drinking a hot latte
during the school year i try REALLY hard to not buy coffee and make my own at home but when pumpkin spice season comes around its a little harder to resist!
yesterday’s lunch was a salad with avocado, tomato, scallions, goat cheese, a trader joes salmon burger, and a fried egg on top
i set off the fire alarm trying to cook my salmon burger..that is the 3rd time since I’ve been at school that I’ve set off the alarm. ooopsie
last night for dinner I tried another new recipe! my friend Amy from Mac and Cheese and Peas (best blog name ever right?!) posted a recipe for israeli couscous with roasted eggplant which I bookmarked last week and made last night for dinner! SO delicious..there is cinnamon in the dressing which makes it a little sweet and savory at the same time
i had one of the leftover spinach feta turkey burgers alongside
after dinner last night I digested and went to Zumba! I have rekindled my love for Zumba since I’ve been back at school..its such an amazing work out and so much fun to do!
lindsay and I meant to take a sweaty selfie afterwards but we forget..ugh. next week we will!
after Zumba I came home hungry and decided there was only one thing I wanted
Peanut butter Banana Protein Soft Serve
- 1 frozen banana
- 1/2 cup plain greek yogurt
- 1/2 tbsp peanut butter
- 1/2 packet sweetner of choice (I use truvia)
- splash of almond milk (if needed)
- place all ingredients in a food processor and blend until everything is incorporated.
note: I used a mini food processor so I had to add a splash of almond milk to get things all blended together (maybe because the blade on my food processor isan’t as sharp?) but a blender would work just as well!
I’ve seen so many versions for banana soft serve around the blog world and I can’t believe it took me so long to make a version of my own
now i have the urge to go out to the store and buy about 20 bananas just for freezer purposes..
time to go get some school work done!

yogurt bowls never get old
neither do ripe juicy peaches..they are THE best. In the bowl went 1 cup plain greek yogurt, 1 drop stevia, cinnamon, chopped up peach, and granola
after a weekend of indulgence all I wanted was a big salad for lunch!
i went to the store this morning mainly because we were all out of bananas (THE HORROR) and picked up some locally grown organic cherry tomatoes. GAH they were SO good I ate the whole pint
half went straight into my mouth and the other half went into my salad beast
in the mix
- 1 cup baby spinach
- red onion
- cherry tomatoes
- non-fat cottage cheese
- a dr. praegers veggie burger
- and siracha and lemon juice for dressing
mm so good! it was my first time trying the dr. praeger veggie burgers and they were really good!
yesterday I went with my mom to get new running sneakers! considering my sneakers had wholes in them I decided it was probably time to get a new pair..so I took Duke to Wellesley college for our 2.5 mile loop to test out my new kicks!
it was a scorcher but we had fun!
i also got a new pair of running capri leggings that I wanted to wear but I soon realized I probably should of just worn shorts considering how hot I was
my new sneakers!
my trail mix bag that I’ve had since June is almostttt gone. I only eat small amounts at a time so it takes me a while to get through a bag but this stuff is the BOMB. I had a small handful after my lunch
and after my run I had a piece of peanut butter toast
i couldn’t resist taking a bite before I snapped a pic
my nut butter supply is running a little though at the moment..time to stalk up! or maybe try and make my own which is something I’ve always wanted to try!
since I worked yesterday night my dinner was a green monster smoothie followed by a granola bar at work..but since that’s boring to show you I’ll show you what I had for Lunch/Dinner on Monday while I was working
I had a house salad with carrots, onions, tomatoes, and cucumber and I added avocado, goat cheese, and blackened salmon to it. For my dressing I chose the citrus vinagrette
i had half of this salad around 3:30 when I finally got a chance to eat some lunch, and had the other half around 9pm
blackened salmon is so delicious!
I am off AGAIN today for the night..my mom, dad, brother, and I are going to Providence Town, MA for the night
I’ve never been so I’m excited to check out what its all about

Breakfast: I’ve jumped back on the overnight oats bandwagon, and boy do I have a creation for you.
Choco-chia-berry overnight oats!
In this super duper chocolately bowl of goodness went
- 1/4 cup plain greek yogurt
- 1/4 cup almond milk,
- 1/4 cup rolled oats,
- 1 tbsp chia seeds,
- 1 tbsp cocoa powder,
- 2 tbsp chocolate protein powder
- 1/2 cup frozen mixed berries
- topped with a teaspoon of almond butter.
Mixed together, placed in the fridge overnight, and voila!
Wow that bowl was amazing. I mean who doesn’t want to feel like they are eating dessert for breakfast?
Note: during christmas season I definitely eat cookies for breakfast..
On a random note, Molly and I took another trip to Costco yesterday and bought a 2lb bag of spinach. It is MASSIVE..it pretty much takes up half our fridge.
After the costco trip I tried to make use of our excess produce by making a huge Salad Beast
In the mix: 2 cups mixed lettuce, 1 cup spinach, 1/2 bell pepper, grape tomatoes, broccoli, leftover spicy peanut chicken, cottage cheese, and mango peach salsa.
Yesterday’s bodyrock was a Fit test to see how much progress you have made from day 1. I forgot to record my fit test day 1, but at least I recorded yesterday’s right?
Here’s what I did
- Squat Jumps (44)
- Push Ups (20 regular, 12 girly push ups)
- Burpees (15)
- high knees (106)
- tuck jumps (20)
- switch lunges (32)
- straight abs (24)
All of these moves are completed for 50 seconds, and the numbers next to them were how many I completed in 50 seconds. I’m pretty sure these numbers are higher than the first time I tried this! Especially the push-ups!
Then I did the following exercises for 2 minutes straight. I went through the circuit twice for a total of 12 minutes..it took me a little longer than 12 minutes though because I took some rest time in between each exercise.

Chest Press (using my makeshift sandbag)
Green Monster time! In the mix: 1 frozen banana, 1/4 cup plain greek yogurt, 1 scoop vanilla protein powder, 1 +1/2 cup spinach, 1 cup unsweetened vanilla almond milk.
I even got Molly to try this and she said it “wasn’t bad” aka she liked it and didn’t want to admit that she liked drinking a green smoothie:)
Last night was Mexican Night! ole ole ole
I made a “skillet mexican chicken” which I wasn’t sure was going to turn out that great but it ended up being delicious! I think I’m going to share the recipe with you later!
We also had homemade guac (courtesy of Molly) and chips and salsa
We did damage on these chips
We were both in a food baby coma after last nights meal..for some reason this always happens to us on Mexican night..maybe we should refrain from buying tortilla chips next time lol
Normally I get hungry again later at night, but I was SO full up until I went to bed
But overall it was a very delicious, and mostly healthy day of eats!

So I’ve really wanted to get back on the “healthy eating bandwagon” and I’ve definitely been eating healthy for the most part, but yesterday’s eats were definitely more of a mix
Which is fine with me, because I’d rather not restrict myself and just eat everything in moderation
Starting out with breakfast!
I had a slice of this banana bread heated up in the toaster oven, with non-fat greek yogurt and blueberries topped with pumpkin butter. And of course I had a cup of coffee x2
so it was the healthy with the not so healthy
For lunch yesterday I went with my friends Eliza and Michelle to Sweet Tomatoes
And I forgot my camera of course, so I snapped a pic with my handy dandy Iphone
I ordered a slice (HUGE SLICE) of traditional and Eliza and I split a ceasar salad. Their pizza is so fresh and I love the thin crust! They use an oil free dough and chopped uncooked tomatoes in replacement for tomato sauce..I think this might be some of my favorite pizza ever!
Throughout the day I also snacked on this apple x2
And I had a handful of pretzel crisps from trader joes that I didn’t snap a picture of
For dinner my mom made a delicious turkey noodle soup! It tasted like thanksgiving in a bowl..yumm
I also had a lot of salad alongside
I filled up my salad plate after I finished this:)
After dinner I was watching cupcake wars (even though I can’t stand the host guy!) and I got a strong craving for a cupcake..so I settled for some coffee ice cream with blueberries on top
My friend Sam taught me how to eat ice cream out of a mug, its the best way!
And yesterday I also did day one of the 30-day Body Rock challenge..I’m pretty sure I’m going to try to complete the challenge! But more on that later..
