Peanut Butter Banana Protein Soft Serve

before I share with you the Peanut Butter Banana Protein Soft Serve I had last night (woof thats a mouthful of a title right?!), lets look at some eats from yesterday!
PUMPKIN SPICE IS BACK-in case you didn’t know..which you probably did. I’m more a fan of the hot pumpkin spice lattes then the iced but it was 90 degrees and humid yesterday (wtf?) so I couldn’t stand the thought of drinking a hot latte
during the school year i try REALLY hard to not buy coffee and make my own at home but when pumpkin spice season comes around its a little harder to resist!
yesterday’s lunch was a salad with avocado, tomato, scallions, goat cheese, a trader joes salmon burger, and a fried egg on top
i set off the fire alarm trying to cook my salmon burger..that is the 3rd time since I’ve been at school that I’ve set off the alarm. ooopsie
last night for dinner I tried another new recipe! my friend Amy from Mac and Cheese and Peas (best blog name ever right?!) posted a recipe for israeli couscous with roasted eggplant which I bookmarked last week and made last night for dinner! SO delicious..there is cinnamon in the dressing which makes it a little sweet and savory at the same time
i had one of the leftover spinach feta turkey burgers alongside

after dinner last night I digested and went to Zumba! I have rekindled my love for Zumba since I’ve been back at school..its such an amazing work out and so much fun to do!
lindsay and I meant to take a sweaty selfie afterwards but we forget..ugh. next week we will!

after Zumba I came home hungry and decided there was only one thing I wanted
Peanut butter Banana Protein Soft ServeÂ
Ingredients:
- 1 frozen banana
- 1/2 cup plain greek yogurt
- 1/2 tbsp peanut butter
- 1/2 packet sweetner of choice (I use truvia)
- splash of almond milk (if needed)
Instructions
- place all ingredients in a food processor and blend until everything is incorporated.
note: I used a mini food processor so I had to add a splash of almond milk to get things all blended together (maybe because the blade on my food processor isan’t as sharp?) but a blender would work just as well!

I’ve seen so many versions for banana soft serve around the blog world and I can’t believe it took me so long to make a version of my own
now i have the urge to go out to the store and buy about 20 bananas just for freezer purposes..
time to go get some school work done!

New Products

so yesterday I was out running errands to get some things I needed before I head back to school (which is ONE WEEK FROM MONDAY..eeek!!)
i went to bed, bath and beyond, and then to target
where I just happened to find this
chobani’s new vanilla chocolate chunk yogurt! bahh!!
I tried a few spoonfuls to test it out and I mean how could you not like it? its a little on the sweet side so I don’t think I would want a big bowl for breakfast or anything but I think its a nice sweet snack or dessert even
here are the stats
the calorie count is higher than their other flavors (which is to be expected) but still healthier than a big bowl of ice cream for dessert. I think this yogurt would be really delicious mixed with fresh berries..yum!
or even kept in the freezer to eat as hard frozen yogurt..now THAT sounds like something i should try!
after target I went to possibly my favorite place ever.
Trader Joes!
I picked up some new to me products as well as some classics
i loveeeee tomatoes
if you like the taste of artificial pink lemonade (which I really do and that may be strange but whatevs) then you’ll love this stuff! i love mixing about 1/2 a cup of lemonade with 1/2 a cup of water to dilute the sugary sweetness a bit
i’ve been on such a peanut butter kick lately and this jar caught my eye..I have yet to dig my spoon in but I’m sure I’ll be swooning over it
you know how grocery stores strategically put products in the check out aisle’s that make you reach your hand out to make those last minute purchases? like you know gossip magazines, packs of gum, etc etc
well trader joes is the MASTER of check out line items that you decide you just HAVE to get (or maybe this is just an issue for me..)..like the chocolate bar above for example..just as good as it sounds. I should of picked up about 5 more for my cart but oh well next time!
and my all time favorite trader joes product
goat cheese with honey. there is nothing better in this world let me tell you
I put this gem to good use in my salad beast for lunch today
in the mix
- mixed greens
- arugula
- heirloon tomatoes
- red onion
- avocado
- rotisserie chicken
- honey goat cheese
all topped with balsamic vinagrette after I snapped the picture!

so for some exciting news..tonight is my last shift at the restaurant!
this job has definitely been one of the harder jobs I’ve had (just because of the long hours, people testing my patience, etc) but every new job is a learning experience!
and that’s about all I’ve got to share at the moment

WIAW-still lovin’ salads

I talked a lot about my summer staples in my last WIAW post!
Breakfast
yogurt bowls never get old
neither do ripe juicy peaches..they are THE best. In the bowl went 1 cup plain greek yogurt, 1 drop stevia, cinnamon, chopped up peach, and granolaÂ
Lunch
after a weekend of indulgence all I wanted was a big salad for lunch!
i went to the store this morning mainly because we were all out of bananas (THE HORROR) and picked up some locally grown organic cherry tomatoes. GAH they were SO good I ate the whole pint
half went straight into my mouth and the other half went into my salad beast
in the mix
- 1 cup baby spinach
- cucumber
- avocado
- red onion
- cherry tomatoes
- non-fat cottage cheese
- a dr. praegers veggie burger
- and siracha and lemon juice for dressing
mm so good! it was my first time trying the dr. praeger veggie burgers and they were really good!
Work Out
yesterday I went with my mom to get new running sneakers! considering my sneakers had wholes in them I Â decided it was probably time to get a new pair..so I took Duke to Wellesley college for our 2.5 mile loop to test out my new kicks!
it was a scorcher but we had fun!
i also got a new pair of running capri leggings that I wanted to wear but I soon realized I probably should of just worn shorts considering how hot I was
my new sneakers!
Snackin’
my trail mix bag that I’ve had since June is almostttt gone. I only eat small amounts at a time so it takes me a while to get through a bag but this stuff is the BOMB. I had a small handful after my lunch
and after my run I had a piece of peanut butter toast
i couldn’t resist taking a bite before I snapped a pic
my nut butter supply is running a little though at the moment..time to stalk up! or maybe try and make my own which is something I’ve always wanted to try!
Dinner
since I worked yesterday night my dinner was a green monster smoothie followed by a granola bar at work..but since that’s boring to show you I’ll show you what I had for Lunch/Dinner on Monday while I was working
I had a house salad with carrots, onions, tomatoes, and cucumber and I added avocado, goat cheese, and blackened salmon to it. For my dressing I chose the citrus vinagrette
i had half of this salad around 3:30 when I finally got a chance to eat some lunch, and had the other half around 9pm
blackened salmon is so delicious!

I am off AGAIN today for the night..my mom, dad, brother, and I are going to Providence Town, MA for the night

Classic Family Dinner

i was about to say good morning and then realized its 12pm..in fact on yesterday’s post I said good morning and it was around 4pm when i posted it..uhhh whoops
yesterday morning for breakfast I enjoyed a batch of OIAJ
for some reason it took me an unusually long time to finish this jar..i think i’ve had it since the beginning of the summer..woah baby!
these were overnight oats in a jar!
mmm
in the mix
- 1/2 banana
- 1/3 cup oats
- 1/3 cup almond milk
- 1/2 tbsp chia seeds
- a spoonful of plain greek yogurt
- 1 drop stevia
- pinch of cinnamon
when  making oats in a jar you should always have at LEAST a tablespoon of nut butter left at the bottom of the jar..thats what makes them so delicious 🙂

whenever we get to the chance to eat dinner as a family at home we have to make sure its a meal to please all of our palates
my brother and my dad are more meat and potatoes kind of people
and my mom and I would rather load up on chicken or fish and lots of veggies
so combining the both are go to Sunday dinner is normally roasted chicken, roasted potatoes (a combination of golden potatoes and sweet potatoes), green beans, corn, and some kind of saladÂ
last night my mom set the table so it looked all purrrty
with olympic inspired napkins
and dinner was served!
roast chicken breast, fresh sauteed corn off the cob, roasted sweet potatoes, and green beans with homemade pesto
YUM.
with some fresh sliced tomatoes, avocado, and cucumber alongside
sprinkled with goat cheese because i’m not the only one in my family who is obsessed
we always argue over who picks the most goat cheese out of the salad..my dad normally accuses me..he’s definitely not right though..

such a delicious meal followed by some chocolate chips and a little bit of ice cream
my family has never been big on desserts, except we all love our ice cream (well except for my mom cause she’s a weirdo..jk mom love you)
i spent 5 hours on the couch watching olympics
i was SO happy for the pair of olympic U.S. divers that won the silver medal their first time competing in the olympics!
i was also so sad for Jordyn Wieber! i think the rules are stupid and that they should have the top 25 scoring gymnasts compete in the all-around competition not just take the top 2 from each country
well that was my olympic rant..time to go make some lunch!

Ten Things Thursday

even Duke constantly feels the need to cool off on the steps of the pool. don’t worry he doesn’t swim in the pool he just sits there..oh hes a strange one that dog
2. Yesterday’s lunch was a BEAST of a salad
in the mix:
- romaine lettuce
- arugula
- chicken
- grilled peppers and onions
- grape tomatoes
- avocado
- goat cheese
- hummus
3. I’ve been obsessed with protein shakes recently after I work out in the morning
my latest combo has been banana, vanilla protein powder, pb2, liquid stevia, ice, and almond milk. simple and satisfying
4. yesterday I attempted to use some new products I received in the mail (coconut oil and coconut flour) to make some blueberry muffins
two words. epic. fail.
they were disgusting..and this is all my fault because i was just totally winging it and knew as I was making these that they weren’t going to turn out well..but i continued to make them anyway..don’t ask why i’m dumb
5. last night at work I was sweating. a lot. not an attractive look as a waitress. it just doesn’t help that our uniform is a black button up shirt and jeans. i mean COME ON. I thought i was going to melt into the ground walking from my car to the restaurant.
6. since I have the best mommy in the WORLD she lays my bed out for me so when I get home from work at 12:30am i can just crawl right in and pass out
pickles (my stuffed frog) was waiting for me with open arms. yes I’m 20 years old and still sleep with a stuffed animal..its whatever.
7. I’m a total chobani lover but yesterday was the first time I had ever tried the Blueberry flavor
um YUM. where has this been all my life? Mixed with some granola and it was the perfect pre-work meal
8. I am going to be MIA this whole weekend because I am going to Delaware to visit my friends and move my furniture into my apartment. I am SO excited
9. I still have yet to pack
10. I can’t think of anything else besides the fact that I’m debating on whether or not to bring my sneakers in case i feel like going for a run while i’m there..and the chances of that happening are slim to none.

Ten Things Thursday

COULD YOU DIE. I was sitting in class yesterday and my mom was sending me pictures of the puppy she was taking care of for a little while. I started freaking out, using my dog voice, and my friends told me I was weird. but actually Mom i hope you kept the puppy hostage
2. Speaking of puppies on Sunday there is an event on my campus called “UD Puppy Rescue Day” I’m attending and adopting a puppy.
3. My best friend Molly just called me to tell me she showed her friends at school my blog and they were all sitting reading it. I was in a bad mood and it made me smile. Oh and I wasn’t going to post today but cause of that I’m writing this random mumbo jumbo
4. I ate this for lunch yesterday
A leftover turkey burger, baked sweet potato, and 1 zucchini sauteed with some grape tomatoes. This was SUCH a filling lunch..I’ve decided I like eating a bigger lunch and a smaller dinner..just like the Europeans do!
5. I had another big lunch today after my lunch-lab
I had some turkey, roasted veggies, salad, potatoes, broccoli, and I didn’t eat the fish cause it tasted fishy.bleh. But everything else was delicious!
6. This is whats happening today Gym<NAP
7. I went out to another mixer last night and dressed up as a biker chick..once this week is over (aka most exhausting/fun week of my life) I will share a whole bunch of pictures
8. Since Airband (the dance competition I told you about)Â has been taking over my life with 7am practices every morning, now whenever I don’t have a 7am practice I wake up at 7am anyways. joy.
9. ps AIRBAND IS TOMORROW NIGHT..GAHHH! Each chapter of Greek Life has a different theme and ours is Pirates of the Carribean ..I’m a pirate so my hair is going to be crazy, along with my make up and costume..I’m gunna look super creepy and I cannot wait

How was everyone’s weekend?
Mine was really fun because on Friday my brother and my friend Mario came to visit!
this was on Saturday before we went to the day drink
can we just talk about how it was 80 degrees and sunny yesterday and now its about 50 degrees and rainy!
Molly’s sister also came down for the weekend to visit!

but you know what? today starts a new week which means there is no need to feel guilty about it
I had a great time visiting with my brother, my friend, and Molly’s sister which is all that matters!
I guess I should probably go study for my exam tomorrow that I have yet to start studying for -___-
